| Pantry Nazi I had a scare earlier this week. I had been having trouble with words being fuzzy on the computer. Then Monday morning everything looked dim and kinda blackish around the edges. Went to urgent care who got me an appt at eye specialist on thursday (earliest available). They found a blood vessel had leaked and sd not to worry about it. YEAH RIGHT!. Told can go back to work on monday. So I have a "vacation" this week. I got scared and since I am diabetic, so did my family. Dtr sd she is going to get our diets better. Her and her boyfriend along with me and dh are overweight. (I am the smallest ). She went through our pantry and put x's on anything that she does not think we need to eat. We plan to go grocery shopping with her. She is also taking control of size of portions (dh's weakness). She is driving me crazy! Her heart is in the right place. But she has turned into a pantry nazi! She comes in 2 ce a week to cook for us which is nice. The most trouble I have is I hate most vegtables. I have declared carrots as def NO. I can still snack as my snacks include saltine crackers and pumpkin seeds (dr sd ok on these). If you hear of a woman inTN going crazy over food, that will be me.

| p.s. Carrots have Vit A, which is supposed to be good for your eyes. I'm a big help, huh?

| I would rather take vitamins for vitamin A then touch a carrot. Funny thing is, when I get salad toppings, i like to eat the dried carrot bits.

Most of the benefits of carrot can be attributed to its beta carotene and fiber content. This root, which has a scientific name of Daucus Carota, is a good source of antioxidant agents as well. Carrots are rich in vitamin A, Vitamin C, Vitamin K, and potassium. Carrots have antiseptic qualities and therefore, can be used as laxative, vermicide and as remedy for liver conditions. Carrot oil is good for dry skin. It makes the skin softer, smoother and firmer. Carrot juice improves stomach and gastrointestinal health. Thus, carrots, as raw fruits juice or in cooked form, are good for your health.

| I had to eat a bite of asparagus. YUCK. I promised to eat a small bite of every vegtable she cooks. I sound like a whiney kid. LOL. I just hate most veggies.

| I just love veggies. I can't think, off the top of my head, of one that I don't like. Have you always not liked them?

| I like potatoes, cabbage, corn, cucumbers, lettuce, fried okra, onions (my favorite), cooked peppers. From a list I saw online, these are what I like. I will eat refried beans if mashed up good in mexican food. I have always been a picky eater. Luckily I like to snack on almonds, pumpkin seeds and saltine crackers. Dr said they will not be bad for me. I will try to eat more salads. I get the jar of McCormick® Salad Toppins to put on them. It includes sunflower seeds, soybeans, onion and carrots, I can stomach the dehydrated small bits of carrots.
