you guys are making me hungry. I do mine a couple ways:
-wash/scrub, rub with olive oil, poke a few holes in them, and bake directly on the oven rack at 350 F (threw that in there for you Canadians ;) ) for about an hour. Test with fork for doneness. I turn them every 15-20 min too.
-I also peel them, then cut into strips the long way like steak fries, and put them on a baking sheet lined with foil. I toss them with olive oil & salt and maybe some seasoning, and bake probably 30-40 min at 350.
-Got this one from a friend's mom from New Mexico (would NEVER think to do this but it's SO good): Peel sweet potatoes, cut into about 1" cubes. Put into baking pan, coat liberally with olive oil. Add 1-3 cloves of chopped garlic, 1/4 cup pine nuts, and 1/2 teaspoon (maybe? I never measure...) dried rosemary. Mix together, and bake covered for 35 min, stirring occasionally. When time is up, take out of oven and stir once more, and top with another 2 tablespoons pine nuts. Put back into oven uncovered and let roast another 10-15 minutes so the pine nuts get toasty. SO good-it's a savory dish for sweet potatoes, but a really nice change from candied yams and that sweet potato mush with marshmallows on the top! I made it for Thanksgiving last year and it was a hit-I'll be making them again this year! |
