The pasta was my extra touch and boy is it good! I like to use gerimilla (sp?) it holds the dressing best. I would think you could also use shrimp if chicken is not your thing. I just had leftovers for lunch. I forgot that I also toss cilantro into the salad as well. Yummy!

| I am trapped at home today---- DS's GF has the car for school and work---- so I am doing a two for one day. I am making Jamie Oliver's, "Jool's Fav Beef Stew", which is assembled, (no browning of the meat!) brought to a boil and then put in the oven for two hours. It's seriously addicting. And for tonight's dinner we'll be having pasta, with a cream sauce that includes, red peppers, red onion, fresh herbs, (whatever needs trimming in the garden) sundried toms, asparagus and grilled boneless breast of chix. That leaves me with a Friday evening of no cooking! |

| I'm so proud of myself (I don't cook...DH does ALL the cooking) but over the weekend I made the Chicken and Biscuits pg. 135 out of the YT cookbook. Not only was it easy but it was YUMMY!!

| I don't know ![]() I just got married and I am in dire need of quick and EASY recipes! I've done all the dishes I actually know how to make haha. My husband likes homestyle southern cooking and I prefer sushi LOL. Maybe I should call Gramma and have her fry me up some fried green tomatoes.

| The Pasta Amatriciana that I made the other night was delicious....and SO SIMPLE! I used some applewood smoked bacon (and I usually detest bacon) in it and the hardest part of making this recipe is cooking the bacon . I used 3/4 tsp of red pepper flakes, b/c it wasn't quite spicy enough for me~ however with that amount, it might be too spicy for some people, so stick with the 1/2 tsp. Pasta alla Amatriciana serves 4 2 Tbls olive oil 6 oz bacon (about 6 slices), chopped medium. You can also use pancetta if it is readily available 1 onion, chopped fine 1/2 teas red pepper flakes, or to taste. 1 14oz can of diced tomatoes 1 28oz can of crushed tomatoes Table salt 1 pound linguine 1/2 cup grated Pecorino-Romano cheese. ~I used Parmesan 1. Heat oil in a 12 inch skillet over medium heat until shimmering. Add the bacon and cook until crisp, about 8 minutes, stirring occasionally. Remove bacon and drain on paper towels. Pour off all but 2 tablespoons of the fat in the skillet. Add onions and saute over medium heat until softened, about 5 minutes. Add red pepper flakes and cook for about 30 seconds. Add tomatoes with juice and salt to taste and simmer until thickened, about 10-15 minutes. 2. Cook pasta in salted, boiling water until al dente; drain and return to pot. 3. Add the bacon to the tomato sauce. Add sauce to the pasta and toss well to combine. Add cheese and toss again. Serve This sauce came together really fast and was very easy to make. I love spicy pasta sauces so I put in a bit more red pepper flakes then was called for. Make sure you cook the tomatoes the full time or else they will taste tinny. You can use any long, thin pasta such as spaghetti or fettuccine. I always serve pasta with a salad and toasted artisan bread that has been lightly rubbed with a cut clove of fresh garlic.

| my dinners USUALLY involve me throwing a sauce, a meat, a veggie, and a starch all in either skillet or the crockpot and eat when they are done. LOL Im not kidding!!! haha Cut up chicken, frozen broccoli in a skillet, add some milk, some olive oil, some garlic and parmesan cheese (sprinkle and mix slowly and thoroughly else it clumps up) elbow macaroni (boiled seperately) mix all together in a bowl. voila! shrimp, mixed veggies, teriyaki sauce in a skillet white rice boiled on the side Mix all together in a bowl, voila! Whole chicken, can of diced tomatoes, BBQ sauce and water in the crockpot all day while at work, get home throw in a cup of rice for a 1/2 hour, boil or steam greenbeans on the side. Voila!!! Im such a SIMPLE cook! I don't like to cook and I LOVE to eat! haha When you don't like to cook you find it takes too much time, away from other things you like to do or need to do, like homework or snuggle time with the pups!
