When I cook roast, potatoes, carrots, and onions for a dinner, I make sure to make more than we will eat in one meal. Then I cut up the leftover roast, potatoes, onions, and carrots, and I add a can of V-8 juice and voila, I have beef vegetable soup. It is GREAT, my family loves it. I also throw in any leftover gravy from the roast dinner too. MMMMMMM, makes me hungry just thinking about it!
