| ![]() I'm getting ready to cook off the carcass tomorrow for broth. From that I will make my Mom's stand by, turkey with noodles. It is kind of like a too thick turkey noodle soup, more the consistency of a casserole but you do it on the stove top. Then I will probably make turkey soup or freeze the broth. I eat turkey all year round with ground turkey and the turkey strips. I use the turkey strips to make fajitas. Those always turn out really good. I also use turkey in place of chicken and make sweet and sour, stir fry, turkey tacos, etc.

| ![]() Hey... we made turkey enchilada's last night too! ![]() ![]() Warm corn tortillas and add some mashed potatoes, roll and hold together with a toothpick. Same with shredded turkey. Deep fry in hot oil. Serve with some sour cream, salsa or guacamole. ![]()

| ![]() My sister got the frozen pie crust and made Turkey Pot Pie. She just mixed the cut up turkey, leftover veggies, stuffing and gravey (or cream of chicken soup) mixed it together and bakes it! Yuuuummmy!
