| ![]() Geesh, this stuff sounds AWFUL but oh so yummy! I hate black-eyed peas too but you cant taste'em in this dip. My nieces even love it. Its very cheap to make and makes a HUGE serving!!! 2 cans drained black eye peas 1 can drained short peg corn 1 can drained rotel 6 whole chopped green onions 1 bell pepper chopped 1 16oz Italian dressing (use Fat Free for fat free dip) Add everything in a bowl and mix it. Put it in the fridge before serving - its better when cold. You can serve with crackers, fritos, or regular ole chips.

| ![]() Here is a great and very easy cracker spread. 1 brick of Neufatchel cheese (like cream cheese, lower in fat and softer) Lightly toasted sesame seeds Soy sauce (light or regular) Pat the outside of the cheese brick with the sesame seeds. Place in a small plastic container with a lid (I use one about the size of the cheese). Pour soy sauce over the top of the cheese, filling container with soy about 1/3 full. Cover and let sit overnight in the fridge. I serve with Wheat Thins or other firm snack cracker, just go for it like a dip. It sounds strange but it is really good.

| ![]() Twalla, THANKYOU!!!!! I absolutely love that stuff. I make a batch every once in a while and eat it with crackers for a low fat high fiber lunch or snack. Yummy!!!!! Sometimes I add in black beans or kidney beans as well. I've never had the cream cheese recipe, I'll have to give it a whirl! |
