OOOOHHHH I love conch. conch salad gives me heartburn due to the scott bonnet peppers... but I will eat anyway.

I LOVE conch fritters... yummmmmmy!! The best conch fritters are from Alamba Jacks on Carl Sound road on the way to the Keys:):)

those fritters were AMAZING!!! And I don't think the conch salad had scotch bonnet peppers in it there.....it wasn't spicy!

I LOVE head cheese. It's often in Viet banh mi sandwiches. Anyway, I love eating pig's ears. I've just found the Korean way is better than the Chinese way.

We have a new Viet sit down restaurant here (fancier). Haven't tried it yet.

Most of the fancier places won't have banh mi's. That is considered street food.
Look to see if this place has banh kot. It's SO good. It's a coconut milk mini pancake (like golf ball sized) with a shrimp inside, and you top with basil, mints and nuoc mom (fish-sauce sauce). The best I had was in San Jose, and I am making brezofleur go try them. :D

Also try bo luc lac (shaken beef). It's pieces of filet mignon in butter and garlic. It's usually about $10-15, but it's so good.

I think here in east tn mountain oysters can be either bear or bull balls. Either way I ain't trying them haha

My grandma used to slaughter hogs. I remember she didnt waste any of it. My most vivid memory is the head in a big tub sittin on her kitchen floor. She also fried the skin and made cracklings. I loved her crackling corn bread.

I remember another incident where she bought about 75 pullet hens and she chopped there heads off with an ax and threw a big wash tub over them so they wouldn't flop all over the yard:eek: my job was to dip them into a big barrel of boiling water and pluck the feathers. It's a wonder I even like chicken now haha

We were just talking about this with MIL the other night. I didn't know dipping them in boiling water helped with the feathers.

Something different that I recently tried was korean style halibut sashimi. This restaurant has tanks of live halibut and abalone. The chef takes one out of the tank after you order and filets it up. The texture is quite different than japanese sashimi. it's more firm, and you eat it like a lettuce wrap with garlic, jalapeno, this type of soy bean sauce, vinegar, and whatever else you want to put in it. It was actually pretty good. You get a ton of side dishes with it too. medium live fish: more than enough for our party of three | Yelp
