Cream of " _____ " soups, have you made them? I have recently started making my own "cream of" soups for recipes instead of the salty fat laden Campbell's variety ~ and I'm in LOVE!! I always have the ingredients on hand, it takes me 5 minutes and they taste amazing :thumbup::thumbup::thumbup: Anyone else tried it? Ingredients are: Butter Flour Milk Water Salt Pepper ______ (whatever the "of"is :winky: ) I have also used chicken stock in place of the milk and water! |
My favorite is Cheesy Broccoli soup....but I use heavy whipping cream and half & half. Potato soup is also awesome! |

The only canned soups I use are cream of chicken & cream of mushroom in my recipes. My "real" soups are always from scratch |

I do love a "proper" cream of mushroom soup ( meaning too nice for a recipe addition) and I make a GREAT rendition if I do say so myself :thumbs up |

I love making soups but what is a new revelation to me is that I can not use "the red can" in recipes calling for "cream of......." Making my own cream of chicken and cream of mushroom and cream of celery etc is easier than I ever dreamed :thinking: :dreaming: |
The only canned cream soup i use is cream of mushroom the rest are home made |

Oh yes! And with the warm/hot weather coming up I love making vichychoisse (cold leek & potato soup). Nothing cools me down better, and adding home grown chives.... yumm!:D |

LOL! Touche! If I had the time to make my own noodles, I wouldn't go back to the box kind! Actually I buy the handmade kind from the asian markets. I very rarely buy dried noodles in a box. There are certain Chinese noodle houses that make their own noodles in house. You can totally tell the difference. There is a type that is basically called "pulled noodles", you pull them by hand. There's a place here that the chef taught Arnold Schwarzt... however you spell his name, how to do it. :) |
Ok I have lots of recipes that call for the nasty Campbell's cream of______. What is your exact recipe lisa? If it only takes 5minutes it's worth the effort to cut down on the sodium content alone!! |
I always get a bad aftertaste using those canned soups. Yuck! |

Like I told you, last time I tried to make a roux it ended up terrible. Even when I make "pan roast" at home I use labne instead of butter and cream. I buy the labne at the market. :eek: You never sent me those magic kefir starting do-dad thingamabobs, so I can't make it myself. If I make a soup with cream, I use coconut milk. Out of a can. :eek: I don't really eat food with soup based sauces. Last time was years ago, filet of sole with cream corn sauce. It's Hong Kong style food, and they serve it with a side of spaghetti, don't ask me why. I haven't liked it much since I was a kid. Other sauces that are creamy like bearnaise or hollandaise I like traditional, and I can't make them from scratch bc I can't do a double boiler worth a crap. But yes, those Campbell soup recipes are gross, just like you said. BETTER?! :D |
