Favorite Summer Salad

Here's my favorite summer salad....

Marinated Cucumber Salad
Small Pickling cucumbers - sliced
Roma Tomatoes -remove insides and slice
Vadilia Onions - coarsely chopped
12 oz. Jar of Hot Pickled Banana Pepper Slices (not enough in my garden)
White vinegar
Canola Oil (which is really rapeseed oil)
A little sweetening (I used 4 packets Stevia In The Raw)
Pinch of Salt
A LOT of coarse ground black pepper (I love black pepper)
Garden Delight Pasta - it's cooking now and will be added later (optional)
Mix all together and let marinate in the refrigerator or for several days. Mine never lasts that long.

oh my.. that sounds yummy. I love Israel salad.. it is cucumbers, onions and tomatoes diced with a vinegar based dressing..but yours sounds even better!!

I used to make a plainer version of the cucumber salad with just the cukes, onions and tomatoes with oil and vinegar, salt and pepper. But it has evolved - sometimes I add olives (black or green) and/or bell pepper of any color.

That looks delicious!

My favorite salad is a grilled chicken/fruit salad with raspberry vinigarette

Salad greens (I like the garden variety, baby spinnach and greens)
Fresh fruit (sliced or diced): Mango, Strawberries, Blueberries, or canned mandarin oranges, any one or a variety works.
Slivered Almonds
Sliced cherry tomatoes
Croutons (I prefer caesar salad flavor)
Grilled Chicken slices
Raspberry vinigarette
Bacon bits (optional)

oh my.. sounds so good! don't laugh but I sometimes just add a can of tuna.. yummmmy

Cha Cha - your grilled chicken/fruit salad with raspberry vinigarette looks good - I just ate lunch, but I'm getting salad hungry! Thanks for sharing.

OMG Roni, I'm with you.....if I see this on a menu (which I do a lot :p )

I ORDER IT :dribble: :drool:

I prefer it with seaweed salad underneath tho :thumbup:

Me too! I love sashimi salad, so fulfilling and healthy too! I make it often myself.

I was also talking to Lisa about one of my faves sunomono salad. Japanese cucumber salad (I know Roni knows what it is, but for the other ladies maybe not?)

Look at this fancy one I found with monkfish liver on top yum!!!
And an easy way to turn it into a low fat filling entree salad, top the cucumber salad on a bed of cold rice noodles or vermicelli, and add shrimp, octopus, or crab and daikon, carrot, sesame seeds, maybe some chili peppers, yum!!

Yes! that's the cabbage one right? Man I haven't had that in years! There was this restaurant we used to go to when we were kids, Tokyo Lobby. It's kind of gone to hell a few decades ago, but back in the 80s and 90s that place was the ish! Like how some people think Benihana is fancy, we thought this place was fancy LOL. They gave you the cabbage salad first. My lil bro liked to put sugar on his. =/

Yes! That's the one. I would think you could find it in the fridge section of an Asian market.

And sugar on his salty cabbage?!? O.o :eek: lol:rolleyes: I always order extra when I go to certain japanese restaurants. I'm sure it's bad for me. lol

We have a regilar summer salad here spinach, baby spring mix witg strawberries, raspberrys,red onions, garbonzo beans, thinly slices red delicious apples, pepperchinis, shredded colby jack cheese and we either us larrupin dill mustard sauce or oil and vibegar with ground black peppwr and sea salt.

Oh my! I LOVE green papaya salad! My MIL introduced it to me. I always thought I hated papaya, it turns out I only hate Mexican papaya. Green papayas are a different type altogether.

Yeah I don't like Mexican papyas either or the ones from the caribean that are even sweeter and mushy like watermelon.

Hmong, Thai, Vietnamese papaya salad smells so strong right and when I tell ppl what's in it they freak out!:eek:

So glad i found someone else who LOVES it like me too! It's literally my fav. I love it with pickles dilly beans, pickles asparagus, giant circus/fair pickle and a Dr. Pepper!:D

7 year old and 13 year old who eat like birds!

Hey at least I have them eating salads though!

I can literally make a salad for the kids all three of them and Derik and then another one just for me!;)

lol Your son doesn't look too happy. I love that white wash look! My townhouse is too small for Ahi to have her own armoire or dresser. :( But the salad looks delish!

Here is one of the salads I make. It has a Hazelnut Raspberry vinegarette. :)
