No, I didn't have to order them. They were under my nose the entire time in the bakery department of my local H.E.B. grocery! I found them by accident.

I can sure see how easy it would be to eat the entire cake in a day or two.

While we were out and about today, we stopped and bought some Bailey's Irish Cream and some more Rum!

I so wish I could send you an entire cake! Next time, I'm going to grate some chocolate strips on top and decorate it a little differently. It was one of the easiest cakes I've ever made!

I wanted to post a picture before we do more damage. It is already "aging" a little. The flavor got better overnight. I can taste more of the coffee flavor. This cake is as addictive as Cheetos!!! (That's very addictive!) You can't just eat one.

OMG I love Myers's! I always wondered why it's spelled like that? Shouldn't it be Myers'? oh well. haha

We are still munching on it. It will be gone by tomorrow night. I'm making another one and am going to try a different variation of what to soak the lady fingers in.

Ingredients

6 egg yolks
3/4 cup white sugar
2/3 cup milk
1 1/4 cups heavycream
1/2 teaspoon vanilla extract
1 pound mascarpone cheese
1/4 cup strong brewed coffee, room temperature

Directions

In a medium saucepan, whisk together egg yolks and sugar until well blended. Whisk in milk and cook over medium heat, stirring constantly, until mixture boils. Boil gently for 1 minute, remove from heat and allow to cool slightly. Cover tightly and chill in refrigerator 1 hour.
In a medium bowl, beat cream with vanilla until stiff peaks form. Whisk mascarpone into yolk mixture until smooth.
In a small bowl, combine coffee and rum. Split ladyfingers in half lengthwise and drizzle with coffee mixture.
Arrange half of soaked ladyfingers in bottom of a 7x11 inch dish. Spread half of mascarpone mixture over ladyfingers, then half of whipped cream over that. Repeat layers and sprinkle with cocoa. Cover and refrigerate 4 to 6 hours, until set.

Yeah, but it sure didn't slow us down any. It's all gone!

I guess we stood more of a chance in getting tipsy on the Bailey's Irish Creme, huh?

That's why I'm going to make another one this week. Needs some tweaking!
