Egg roll wrappers come ready to use and are made from egg, that is why they are called egg rolls, even though there isn't actual egg in it, and those are yellow.
Sometimes they call spring rolls summer rolls also. They aren't supposed to be deep fried. I doubt the rice paper would hold up. Only the egg wrappers should be fried.
Oh duh, what goes inside. rice noodles or bean thread noodles, lettuce, pork sausage or shrimp (usually halve the shrimp lengthwise, not being cheap, it's just too bulky with a whole shrimp), pickled daikon and carrot mix, mint, basil, some times a rolled up piece of egg roll wrapper inside for more crunch. the dip is a fish sauce based dip, with garlic, chili, soy sauce, sugar, water, lime juice. I usually wrap it in more lettuce and daikon/carrot mix and mint. |
