Ah, I love crock pot recipes! My boyfriend's mama gave me a HUGEE crockpot recipe book! Problem is we dont have a crockpot..lol. Makes me crave my parents homemade food. Sucks being 20 and living off hamburger helper. |

I made this last night! I crockpotted for the first time...woo hoo! SO EASY. Hubby loves this dish. Since it had meat, I only picked out the beans and corn for a taste...and I really liked the taste. Fyi, this is not a good-looking dish. If anyone has visual food issues, this one may not be great for you. It kinda looks like a big pink slop when you're done, lol. I did the dish as written, but also added some cumin, salt/pepp, garlic powder, onion powder. Next time, I want to add real onion. I was reading the reviews on this recipe online...and some other things people tried were: onions, garlic, bay leaves, cumin, taco seasoning, Rotel tomatoes. And they served this dish with: rice, noodles, tacos, burritos, nachos, taco salad shell. Apparently, it freezes really well...so you could make a bunch and freeze it. |
oh, Ann thank you for that, I have Rotel tomatoes, i am planing on making it a burrito style dinner, I bought, flour tortillas , I am making it for dinner tonight.. I will report.. I will add the rotel and onions, salt and pepper, my guys don't have any visulal food issues, as long as it smells and taste good, they will eat anything..LOL |
I think I'm going to make this on Sunday. Ann, do you think it would be good rolled in a tortilla like a burrito? |

Oh also -- I should add that I used low-fat cream cheese, and I only used 1/2 a block, and I feel like that was plenty. One thing you might try to make it less liquidy....is before you add the cream cheese (that last 1/2 hr), use a spoon and drain out some of the liquid/juices...and then add the cream cheese. Tony just loved it...after he finished the burrito, he took a fork and started having a few bites right from the crock pot. :) |
I am going to make this over the weekend too. I printed the recipe and had already decided to add some different seasonings. Glad to know about the draining and using less cream cheese!! I am starving just thinking about eating it:) |

Oh...another tip...some people on the recipe site recommended adding fresh cilantro for taste and visual appeal (like if serving over rice); the little burst of fresh green brightens it up a bit. Alot of people seem to also use this as a dip for nachos/tortilla chips - yum! It's def a comforting dish...warm, hearty, thick, smells fab. |
