| BBQ throughout the USA Just wondering where everyone's favorite BBQ joint is, what they've tried, who has the best BBQ, what state, what city? I happen to live in the BBQ capital KCMO! We have Oklahoma Joe's which is literally a hole in the wall in a gas station but the BEST around. We also have Gates and Arthur Bryants. YUMMM and of course MY FATHER!! and I know the architect of the first ever original FAMOUS DAVE'S in Hayward, WI and have been several times to the original restuarant and sat with said architect who happened to have a moment when a waitress commented on the design and put her foot in her mouth big time Anyways let's talk BBQ |

| They opened a Famous Dave's here, but it hasn't really gotten too many good reviews. I think what we are used to over here in CA is a lot different. Lucille's is really popular here, but quite frankly I don't think they are that great. Their ribs are expensive and usu come out dry and not very meaty. There is the Mrs Knott's restaurant at Knott's Berry Farm that is famous for their fried chicken, but really their ribs are good! I don't know the style, but the cook it with the sauce on. I know certain styles bbq with just the wood chips and sauce is on the side, if needed at all. I make some good cheater ribs. You steam them in the oven at 350 for about 3 hours for one rack of baby backs and they are soooo tender. I salt and pepper them and put in a few cloves of garlic beforehand. Put in a 1/2 cup of water (or enough to fill the bottom of the pan) and cover tightly with foil. After 3 hrs I smash the garlic onto the ribs and then put on Sweet Baby Ray's hickory bbq sauce and broil with no foil for another 15 mins or until the sauce starts to thicken. I serve these with my famous red skin garlic mashed potatoes. I haven't traveled much to the any of the bbq capitals, so I don't know much about it, just know I love to eat it! I found I don't like spare ribs as much though. Even though they have more meat, the meat tends to be tougher. I tried both kinds with my steaming method. What is St Louis style, Rachel? You should know right? Your neck of the woods.

| St. Louis-style barbecue sauce is described by author Steven Raichlen as a "very sweet, slightly acidic, sticky, tomato-based barbecue sauce (usually made without liquid smoke)". from wikipedia...i'm not really from St. Louis, more used to KC BBQ style. I like the sweet and a little bit of kick bbq sauces. | I'm a big fan of NC barbecue. Basically, in NC, there are two different styles of barbecue. Most of the difference is in the sauce. Eastern NC sauce is thinner and vinegar-based. Western NC sauce is thicker and sweeter...more tomato-y. I think there are also some difference in the pork and in the slaw...but I don't exactly what those are. And I don't eat slaw. I like Eastern NC barbecue better - that vinegar sauce is AWESOME.

I do tend to like the sweet and spicy sauces. I usually love anything vinegary, but with bbq I like thick, sticky, sweet and hot sauces. I used to hate slaw, but then started to like it. The first time I liked it was pineapple slaw. Now I love all kinds of slaw. I really like cabbage now. I esp love slaw with a bit of pickled red cabbage, and the rest sweet.

| My mouth is watering reading this thread! I lived in the South for a couple of years, and there is no substitute for good barbq! Can't get it where I live. First time I had good pulled pork barbq w slaw on top, I thought I died and went to heaven!

| It's called home! LOL We don't have any great bbq places here but my hubby is a master at bbq and smoking. He smokes the best ribs, pork, brisket around. Combined with my sil mother's homemade bbq sauce it is the BOMB! lol Speaking of smoking..we are going to smoke some marlin on Thursday. My hubby caught a 150+lbs. marlin this past weekend. It's marinating right now. Any one got any good homemade bbq sauce recipes? I love the bbq I had when I was in Texas. It was at Texas Lil's Dude Ranch or something like that. It was awesome!

| Where is that? And is it a bbq place? We caught that spider train to Ft. Worth and had bbq at Riscky's and that was good. Also at some spot my mom took us to...I forgot what it was called. LOL What other places do you recommend there? (For my next visit)

| baked beans are another BBQ must have. i make mine with van camps pork and beans, squirt of mustard, handful of brown suger, some ketchup, and some of whatever bbq sauce flavor i'm wanting. sometimes i add bacon and onions. i make this in the microwave, stovetop, or bake it for extra goodness. |

| famous dave's georgia mustard is really really good. i love their sauces but i agree lately their restaurants are really lacking. to taste the taste of microwave on your meat makes you never want to come back... |
