I'm a big fan of NC barbecue.
Basically, in NC, there are two different styles of barbecue. Most of the difference is in the sauce. Eastern NC sauce is thinner and vinegar-based. Western NC sauce is thicker and sweeter...more tomato-y. I think there are also some difference in the pork and in the slaw...but I don't exactly what those are. And I don't eat slaw.
I like Eastern NC barbecue better - that vinegar sauce is AWESOME.
