| Quinoa Salad Recipes Please share some yummy Quinoa Salad recipes. We love it cooked with a little bit of butter, salt and pepper as a side dish, but I'd like to try it in some of YTer's taste tested recipes. |

| Okay I'll go first :) This is actually one of my favorites! Tomato-Mint Quinoa Salad 2 1/2 cups water 1 1/4 cups quinoa 1/3 cup raisins 1 pinch salt 2 medium tomatoes, diced 1 medium onion, minced 10 radishes, quartered 1/2 cucumber, diced 2 tablespoons sliced almonds, toasted 1/4 cup chopped fresh mint 2 tablespoons chopped fresh parsley 1 teaspoon ground cumin 1/4 cup lime juice 2 tablespoons sesame oil salt to taste DIRECTIONS: 1. Bring water to boil in a small saucepan. Pour in quinoa, raisins, and a pinch of salt. Cover, and let simmer for 12 to 15 minutes, then remove from heat, and allow to cool to room temperature. 2. Toss together the tomatoes, onion, radish, cucumber, and almonds in a large bowl. Stir in the cooled quinoa, then season with mint, parsley, cumin, lime juice, sesame oil, and salt. Chill 1 to 2 hours before serving.

| I also love to use it as a "pasta substitute" and coat it in a homemade red sauce

| I like to make homemade salsa with pineapple, mango, onions, tomatoes jalepenos, cilantro and lime and mandarin oranges, with a squeeze of lime add quinoa and eat on fish tacos!! yummo!! I like mahi mahi tacos with this!!

| Quite delicious have been known to make this and have eaten for breakfast without the fish taco part! I just add more quinoa. I love quinoa I hope we get some response on this thread I would love more recipes with quinoa.

| sugarmamma your recipe sounds delish too. Now I am hungry! I actually am cooking my pork roasts today getting ready to make tamales tomorrow!! Quinoa mexican salad with tamales??? Hmmmmm now theres a thought.

| I've never made it myself, but the way I've had it was in a southwest style salad with black beans, corn, onion, red and green bell pepper. I never wanted to try it bc it's touted as a "health" food, but once I tried it, it's actually quite good!
