| I make two delicious simple soups stock made with OxTails. Prepare the OxTails -- Brown Oxtails on all sides. Throw them in the soup pot and cover with water (at least a an inch over the top of the ox tails. Bring to a boil and let them simmer several hours to make a rich beef stock. Cool, smim fat off the broth, remove OxTails from pot pull the meat off and discard fat and bones. This stock freezes well -- I try to keep some on hand all the time for a quickie soup. Vegetable soup -- I add a package of frozen "soup mix" vegetables plus a small can of diced tomatoes to the broth and meat and simmer for a couple of hours. For the French Onion Soup -- 1 small to medium onion for each serving 1" thick slice french bread Mozzerella Cheese Place french bread in a bowl, cover with onions and Mozzerella Cheese, pour hot broth over the top and pop in the micorwave until the cheese melts. Oh my it's yummy!!!! |

| Funny to see oxtails mentioned...my MOM loves them but you don't hear of many people who do. She puts them in her veggie and barley soups. I would love to help you as I make alot of soups but I don't do recipes...I am more of a throw this and that together and VOILA!! My favorite concoction being my Cheesy Broccoli soup....

| Chicken Soup! One boiled and boned Chicken - set aside Strain the broth Add: 5 chicken bouilon cubes 2 Ramen flavor packets (chicken) Salt (or garlic salt opt.) Pepper 4 med. diced potatoes Boil potatoes in broth until tender Add the ramen noodles and chicken. Done! Optional Chicken/Gravy over mashed potatoes: Boil and bone one whole chicken - set aside Strain the broth Add: 5 chicken bouilon cubes 2 Ramen flavor packets Salt (or garlic salt opt.) Pepper Bring to boil and add 4-5 tablespoons of cornstarch Return chicken pieces to the gravy Serve over mashed potatoes Good luck!!

The original recipe called for italian sausuage. I adapted it when I stopped eating meat. It's missing a little something and so far I just add some pesto and all is good. I've also tried adding Tofurkey sausage but it wasn't quite right. If you come up with anything else, let me know. Colcannon Soup Ingredients 2 tbs Butter 2 1/2 c Potato diced 1 c Onion diced 1/2 tsp Salt 3 c Vegetable broth 2 c Water 1 lb Savoy cabbage 1 tbs Fresh thyme Instructions Melt 1 Tbsp butter in pot over med heat, add potato, onion, salt and pepper, cover, cook 6 min. Add broth, water, bring to a boil, cook 10 min. Combine 3 T water and 1 T butter in skillet, add cabbage and thyme, cover and cook 10 min. Salt and pepper Blend potato mixture till smooth, add cabbage, heat through

| This is my latest favorite soup~ it's really delicious and it freezes fantastically! Southwestern Soup Description: Prep: 15 min., Cook: 45 min. Ingredients: 1 pound ground beef 1 cup coarsely chopped onion 2 garlic cloves, minced 2 (16-oz.) cans light red kidney beans, rinsed and drained 1 (15-oz.) can black beans, rinsed and drained 1 (14.5-oz.) can petite diced tomatoes and jalapeños, undrained 1 (14.5-oz.) can diced tomatoes and mild green chiles, undrained 1 (14-oz.) can beef broth 2 cups frozen yellow and white whole kernel corn 1 (1-oz.) envelope taco seasoning mix 1/4 teaspoon salt 1/4 teaspoon pepper 2 tablespoons chopped fresh cilantro Toppings: sour cream and chopped fresh cilantro Directions: 1. Brown ground beef, onion, and garlic in a large Dutch oven over medium-high heat, stirring often, 10 to 12 minutes or until meat crumbles and is no longer pink and onion is softened; drain. 2. Stir in kidney beans, next 8 ingredients, and 4 cups water. Bring to a boil over medium-high heat. Cover, reduce heat to low, and simmer 30 minutes or until thoroughly heated. | Here's one of my new favorite's. Paula Deen's Taco Soup. You can also make in on the stovetop and it doesn't take as long. I halve the recipe and add a can of chicken broth. Taco Soup Recipe : Paula Deen : Food Network Here is another favorite and it's very easy and quick to prepare: Joanne’s Bean and Pasta Soup Saute: 2 slices bacon - chopped 3-4 mild italian sausage-removed from casing and crumbled 3 cloves garlic - diced 1 medium onion - diced Then add: 1 14-15 oz can beef broth 1 15oz can Hunt’s chili beans - undrained 1 15oz can small white beans - undrained 1 15oz can whole tomatoes - diced 1 can water 1 tsp salt 1 tsp pepper 1 T. dried parsley 1 tsp thyme or to taste 15 minutes before serving add: 1/2 cup small shell pasta Serve with shredded parmesan cheese

Toss pork, starch, salt, and soy in med. bowl. Cover and put in fridge for 15 mins. Meatless version: In large stock pot/stew pot, heat broth, vinegar, soy, salt to boiling; stir in bamboo, mushrooms, pork (if using), and tofu. Heat to boiling; reduce heat, cover & simmer for 5 mins. Mix starch, water, and pepper – then stir into soup. Heat to rolling boil over high heat, stirring constantly. Pour beaten eggs slowly into soup – stirring constantly w/ large fork until egg forms threads and soup thickens. Stir in green onions, pepper sauce, and sesame oil. Simmer on low heat for 3-5 mins., then serve.
