Ox Tail Soup I make two delicious simple soups stock made with OxTails.
Prepare the OxTails --
Brown Oxtails on all sides. Throw them in the soup pot and cover with water (at least a an inch over the top of the ox tails. Bring to a boil and let them simmer several hours to make a rich beef stock. Cool, smim fat off the broth, remove OxTails from pot pull the meat off and discard fat and bones. This stock freezes well -- I try to keep some on hand all the time for a quickie soup.
Vegetable soup --
I add a package of frozen "soup mix" vegetables plus a small can of diced tomatoes to the broth and meat and simmer for a couple of hours.
For the French Onion Soup --
1 small to medium onion for each serving
1" thick slice french bread
Mozzerella Cheese
Place french bread in a bowl, cover with onions and Mozzerella Cheese, pour hot broth over the top and pop in the micorwave until the cheese melts. Oh my it's yummy!!!! |
