| Zucchini bread recipe? Anyone have a good zucchini bread recipe? I used to have an awesome one, but I can't find it I know mine had raisins, nuts, nutmeg, ground cloves, lots of zucchini, etc... Thanks, in advance!!!

| Beat 3 eggs with 1 1/2 cup sugar. Blend in 1 cup oil. Mix in 1 teaspoon vanilla, 2 teaspoons baking soda, 1 teaspoon baking powder and 1 teaspoon salt. Beat in 1 teaspoon cinnamon and 1 teaspoon ground cloves. Grate and add 2 cups raw zucchini. Blend in 2 cups all purpose flour. Add 1 cup chopped nuts. Grease and flour 3 small loaf pans and bake 350° for one hour. When cool, wrap and keep refrigerated. |

| Thanks, Shadow!!! That's very similar to my old one. Except I think there was more zucchini in mine. Maybe I'll experiment with one of the loaves & add some more LOL

| The one I had also had 1 c. of oil ...I wanted to slash calories so I reduced the oil to 1/2c of oil & added 1/2c of applesauce w/ it & it worked great....

| This is the one I have been useing for many, many years and it's great! Mix; 3 eggs, 1 C. wesson oil, 2 C. sugar, 1 tsp. vanilla, 1/2 C. pecans, and 2 C. grated zucchini. Sift: 3 C. flour, 1 tsp. soda, 1 tsp. salt, 1 /2 tsp. nutmeg, 1 1/2 tsp. cinnamon, and 1 tsp. bakeing powder. Grease & flour 2 loaf pans Bake 1 hr. at 350 degree Remove from pan at once. |

| Best Zucchini Bread Ever Here is mine: 3 eggs 3 tsp vanilla 1 c oil 2 1/2 c sugar 2 c grated zucchini 3 c flour 1 tsp salt 1 tsp baking soda 3 tsp cinnamon 1/4 tsp baking powder 1/2 c nuts Mix eggs, vanilla, oil and sugar.
