That's funny, because I was going to include a Chicken Enchilada recipe. I looked at yours and it is almost identical to the one I use. Isn't it fantastic???? I think it is the whipping cream that makes it! My bunch loves it!

Aren't those enchiladas AWESOME?! My husband always begs me to make them! I think they key is also the CORN tortillas vs. flour tortillas which get soggy. YUCK!

I also added a Salsa recipe that is truly awesome....but "warning" it is extremely hot

You could probably calm it down a bit by removing the seeds before cooking if your not into super hot salsa's

I was gonna ask you about that! LOL, don't tell me out there in Texas that they still sell it as "oleo".

LOL I put margarine in parentheses, but whoever edits it might just want to change it to that for the final copy. I guess I'm just showing my age.

I have a request here...I love this spinach dip that is served in a sweet bread bowl....I want to say it has water chestnuts and cream cheese? If anyone knows that one, please submit that recipe! I love that stuff.

my fave is the spinach artichoke dip that you get at Apple Bee's, OMG I love that stuff!!!!!

Me too, and Red Robin also has that dip which is even better. We go there once a week just to get that dip.

Well I added two doggie recipes (of course)

I know the human and dog recipes were going to be seperated in the book anyway, but having the book flip over to start the dog recipe section is a good idea. I have a recipe book like that and really find it helpful.
