| Fat-free muffin recipe? Does anyone have a recipe for fat-free muffins? I want to make a couple of dozen large ones at a time, freeze them, eat one for lunch every day and lose those winter pounds. Thanks, Judy |

No Longer a Member | Yes...here's three ...Krusteaz Fat Free Blueberry Muffin Mix, Krusteaz Cranberry Orange Muffin Mix, and Krusteaz Banana Muffin Mix. Seriously, these are just add water and they are good. I've been off and on a diet pretty much for the last 11 years. Most baked fat free stuff just comes out rubbery. The krusteaz ones are really good and will run you between $2.50 and $3.50 a box. hth |

| I have yet to find a standard fat free muffin recipe that tastes good. One option is to buy a mix, like Krusteaz. Choose one of the fat free mixes. Watch out for the surgar in those though. What I do is take any muffin recipe and modify it. I replace the fat with vanilla yogurt or sour cream, or in a pinch I use FF mayo. I usually add a whole 6 oz container of the yogurt (or equivalent of sour cream or mayo) so the muffins turn out moist. Instead of whole eggs I use egg substitute. If the recipe calls for butter or margarine, use butter spray or butter buds. Just remember, if you remove fat, you must replace that with moisture and flavor. I find making fat free muffins works best if you make a fruit muffin, like banana or apple. Raspberry is also good! You can also substitute Splenda for sugar in the recipes.

| This is a weight watchers recipe 1 box of spice cake mix 1 can of pumpkin (not the pie) mix together and bake as the directions on the box of cake mix for muffins ENJOY!! So yummy!!

| 2points for 1 muffin!! They are really yummy and you can also use devils food cake mix as well, can't really taste the pumpkin I know it sounds gross but really good when you need a choc. fix!!

| I made a cake because I don't have giant muffin pans yet. I ordered some from e-Bay. I cut the cake into 10 pieces, each about the size of large muffin. They're in the freezer and I'm about to have one with a cup of coffee for lunch. They are yummy! I used about 3 cups of white flour, blueberries, some cut up apples, had to use a cup of sugar (had no substitute in the house), about a cup of unsweetened apple sauce, a lot of fat free vanilla yogurt, baking powder, baking soda, sprayed the pan with Pam, and I think that's it. I baked them for about 20 minutes. The Krusteaz site has a lot of good fat free recipes and great ideas for what to add. Next time I'm in the store, I'll see what I can find. I'm not a cook at all, but this was fun and so easy. Max enjoyed his little piece too. Thanks for your help! Judy |
