I have yet to find a standard fat free muffin recipe that tastes good. One option is to buy a mix, like Krusteaz. Choose one of the fat free mixes. Watch out for the surgar in those though.

What I do is take any muffin recipe and modify it. I replace the fat with vanilla yogurt or sour cream, or in a pinch I use FF mayo. I usually add a whole 6 oz container of the yogurt (or equivalent of sour cream or mayo) so the muffins turn out moist. Instead of whole eggs I use egg substitute. If the recipe calls for butter or margarine, use butter spray or butter buds. Just remember, if you remove fat, you must replace that with moisture and flavor. I find making fat free muffins works best if you make a fruit muffin, like banana or apple. Raspberry is also good! You can also substitute Splenda for sugar in the recipes.
