Here's the recipe for Gina's (mustangbee) blackened chicken... Pre-heat oven to 500 degrees. Place chicken in baking pan, place in oven. Cook until you smell smoke or the smoke alarm goes off (it's as convenient as the timer on the oven ;) ). Remove from oven and inspect to see if it's fit for consumption. Do NOT remove chicken from pan....place the entire entree', baking pan and any necessary cooking utensils in the trash. Pick up the phone....order pizza....chicken pizza ;) |

Grilled Italian sausage with sweet and sour peppers Ingredients: 4 Tbsp slivered almonds ¼ cup raisins 3 Tbsp red wine vinegar 2 Tbsp sugar ¼ tsp salt Dash of black pepper 6 uncooked Italian sausage links 1 Tbsp olive oil 2 green and 2 red bell peppers cut into 1-inch strips 1 medium red onion sliced In fry pan boil sausage in about 1 inch of water with lid on for about ½ hour or until non-pink when cut in half. Dump out water, brown sausage and set aside on plate In same pan brown almonds in olive oil, stir in raisins, vinegar, sugar, salt, and pepper until sugar dissolves. Throw in veggies, sausage and cook until veggies are tender. Arrange on plate and serve with garlic bread. This is REALLY good, as it has a unique taste, and is not your run of the meal sausage and bell pepper recipe. |
Here’s a tip for you, if you have a Trader Joe’s near you I buy the boneless, skinless, frozen chicken breasts because they are thinner. I also ALWAYS have in my freezer their frozen crushed garlic cubes. They come 20 in a pack and saves time from using real garlic. If you don’t have a Trader Joe’s near you, any boneless chicken will do, just don’t buy it thick, and use fresh garlic if you prefer. Thai Cilantro Chicken 4-6 boneless chicken breasts 3 garlic cloves, peeled 4 dashes of GREEN Tabasco sauce 1 bunch cilantro leaves washed and cut up 1 finely grated rind of a lime 3 Tbsp limejuice 2 Tbsp soy sauce 1 Tbsp white sugar 1 cup coconut milk Cut three slashes in the top side of the chicken breasts Put all the ingredients minus the chicken in a blender or food processor until a smooth puree forms Poor over chicken coating both sides and marinate in your fridge for an hour Place chicken on a cookie sheet, drain off excess marinade, some will remain, so don’t worry Broil under preheated oven for about 15-20 minutes, turning ½ way through Meanwhile place remaining marinade in a saucepan and bring to a boil, then simmer for several minutes. Pour sauce over chicken and serve with white rice or pasta. Salad: (I will post again separately as it is really good) Spring mix lettuce (purchased in a bag) Toasted slivered almonds Red onion Crumbled gorgonzola cheese Sliced pear (I buy it in a can) Brianna’s blush wine vinaigrette salad dressing Total prep time, around 10-15 minutes |
Baked Capri Salad to be served as an appetizer or side dish Ingredients: 2 large beef-steak tomatoes 1 log of mozzarella cheese 1 small can sliced black olives Fresh basil as garnish (optional) Olive oil and balsamic vinegar Preheat oven to broil Each serving is three layers of: First tomato, cheese, olive, again, and again, ending with cheese/olive/and the optional basil on top. Broil until cheese is crusty on top, and drizzle with olive oil and balsamic vinegar. Sometimes I will change it up by adding a slight bit of garlic in the second layer. |

CARROT CAKE 2 C. Flour 1 t. baking powder 1t. baking soda 1 t. cinnamon 2 C granulated sugar 4 eggs 1 1/2 C. Crisco Oil 3 C. grated carrots the following ingred. are optional: 1 cup chopped walnuts 1 can of crushed pineapple, MUST BE DRAINED TO almost dry Sift together the flour, soda, baking powder, cinnamon, and granulated sugar real good. Add the Oil to the dry ingredients above, Mix well by hand with spoon. (DON'T USE ELECTRIC MIXER IN PREPARING THIS RECIPE.) Add eggs one at a time mixing well after each. Slowly blend in the carrots. (I always add the pineapple and walnuts next and even have added 1/2 Cup of coconut and !/2 cup of raisons). Prepare 2, 9 inch prepared cake pans (pre-greased and floured) Bake for 45 minutes at 350. Frost with cream cheese frosting, topped with bit of coconut and finely chopped walnuts. |
The world’s best, and yes, most fattening potatoes. I serve these on holidays only, and yes, the men will be eating out of your hand to have these again, and they are sooooo easy. Serves plenty… 2 bags frozen shredded hash browns 2 cups onion diced 32 oz sour cream 2 sticks butter 16 oz grated cheddar cheese 2 cans cream of chicken soup Spray large Pyrex with Pam, put in ingredients (I melt the butter first), and bake in preheated oven at 350, for around 45-60 min. or until brown, stirring every 15 minutes for the first ½ hour. Make appt at gym and work out for the next year. |

Serbian eggs Ingredients: 6 eggs 1 lb crated jack cheese 1 lb cottage cheese 1 C Bisquick 1 C Milk, low fat is ok 1 Cube butter or margarine 1 Cup chopped onion 1 small can diced green chilis 1 and ½ cup diced ham Mix all ingredients with a hand beater. Bake in 10 X 14 inch Pyrex dish at 350 for about 40 minutes Serve with green salsa or guacamole |

Chicken Marsala Ingredients: 4-6 skinless frozen chicken breasts ½ C flour ¾ C Italian bread crumbs 1 C marsala wine 3 cloves garlic dash of salt and pepper 1 container sliced mushroom in your fresh veggie section of market ½ C water ¼ C olive oil ¼ C capers Mix flour and breadcrumbs together in baggie pour onto plate Heat olive oil in skillet over medium heat Rinse chicken, and coat with flour/bread crumb mixture, brown in olive oil Throw in remaining ingredients, simmer on medium low with lid for about ½ hour turning chicken ½ way through. I put capers in last, for about 5 minutes. I also add some remaining flour/ breadcrumbs and a bit more marsala wine depending on texture and consistency. Serve over angel hair pasta. |

Buttermilk Baked Chicken 3/4 cup of butter 4 boneless skinless chicken breasts, cut them in half 1/2 tsp salt 1/2 tsp pepper (or Ms Dash garlic, if you can't handle pepper) 1 1/2 cups buttermilk divided 3/4 cup all-purpose flour 1 (10 3/4 ounce) can of cream of mushroom soup, undiluted Melt butter in a baking pan in a 425 degree oven. Sprinkle chicken with salt and pepper, dip chicken in 1/2 cup of buttermilk and dredge in flour. Arrange in baking dish and bake for 15 minutes, turn chicken and bake for 10 more minutes. Stir together remaining buttermilk and soup. Pour over chicken and bake again for 10 more minutes covered with aluminum foil. Serve over mashed potatoes!! This is one of my most favorite recipes! Hope ya'll like it!!! BTW, you can use non fat buttermilk and reduced fat, no sodium soup, it tastes just as good!!! |
Lasagne! Now I know any Italians out there may cringe at some of the ingredients, but everyone asks for this recipe. What you need... 1 1/4 lbs of ground turkey(I use the turkey store brand) 1 large can of Hunt' Sauce(there are several kinds I like garlic and herb) 1 small box of frozen spinach(defrosted and strained) 1 16 0z carton of sour cream 1 16 oz carton of lowfat cottage cheese 1 16 oz package of shredded cheddar 1 16 oz package of mozzarella about 10 lasagne noodles Preheat oven to 350. First cook the turkey in a skillet. After it is browned, add the sauce and simmer for about 10 mins. While you are doing this cook the noodles according to package directions. Drain noodles. In a separate bowl, mix the cottage cheese and sour cream. Here is how you layer... Lasagne noodles at the bottom then the turkey/sauce mixture, then the sour cream and cottage cheese mixture, then a layer of spinach, and finally a layer of the two cheeses mixed. Repeat this layering 1 more time. You can freeze it at this point and reheat for about 1 1/2 hours on 350. If you want to cook immediately cook for about 40- 50 minutes. Now for those of you who are opposed to cottage cheese or any of the ingredients I beg you to try this. I promise you that even the pickiest friend or family member loves this. Also, for all of you meat lovers, no one ever notices that it is ground turkey and everyone is shocked by the ingredients. |

OK...here goes...these potatoes are always requested at family stuff around here. Au-Gratin Potatoes (My son used to call them "all rotten" - he was learning to talk and could not say Au-Gratin...LOL) 4 - 5 potatoes (irish or red potatoes - peeled or not) sliced about 1/4" thick 1 onion - thinly sliced (you can also use green onion) 1 stick butter (13X9X2 pan or 1/2 stick for 8X8 pan) Salt Pepper Garlic Salt Milk Grated cheese of your choice Layer potatoes, onion and seasonings in glass baking dish. Slice stick of butter into 1/4" pats and place over the top of the layered ingredients. Pour milk over mixture until you can see about 1/4" in bottom of the dish. Cover with aluminum foil and bake at 400 degrees for about 45 minutes or until done. Turn off the oven. Remove aluminum foil and sprinkle as much cheese over the top as you dare and place back in hot oven until cheese melts. Enjoy!!! |

Baby Blessing I just put a pot on the stove with a little water in it, laid another small stainless steel bowl on top of the pot, put in the ingredients and just stirred until it melted. I am going to try putting a can of cherry pie filling on top of it this time. I always wanted to make cherry cheese cake but did not have an easy recipe for it thanks BamaFan121s. By the way, my desserts usually lasts a week and I end up throwing some out, this one lasted 2 days and I only cut off little pieces. I shared with friends and family, I actually had one friend staring at it to see if I actually made it and not bought it instead. I can cook but desserts are not a good quality of mine. |

Tuna pasta bake Quick and simple tasty meal pasta for 4 tin of tuna tin of chopped tomato's tomato mixed herbs cheese plain crisps Cook pasta for 5 mins, then drain, add tin of tomato's, generous helping of mixed herbs, tuna,and generous helping of grated cheese and stir. Put into shallow dish then crush crisps and sprinkle over the top, grate cheese on top of this and then put slices of tomato's on top. Put in oven for 20 mins Serve with salad/chips....lovely |
