| Want to share a simple and yummy recipe with you all... Just IN CASE any of you havent tried this simple recipe....this is what i'm baking right now, and believe me, they are scrumptious!! SWEET POTATO BALLS Sweet potatoes sugar brown sugar cinnamonn nutmeg (pinch) vanilla flav sweet coconut jumbo marshmallows Bake sweet potatoes. Skin them. put in bowl and mash up with: brown sugar, white sugar, vanilla flavoring, cinnamon, nutmeg. Mix sweet coconut with dab of cinnamon, white sugar and brown sugar. Mold the sweet potatoe mixture around a large marshmallow, then roll in the coconut mixture. Bake 350 degrees for 30 mins or until coconut turns a light brown. This recipe works best if you put your sweet potatoe mixture in fridge for a bit before molding around marshmallows...makes it a bit thicker and easier to work with! Hope you all enjoy! An alternative to the coconut is to roll them in pecan chips. I've even added some to the sweet potatoe mixture itself in the past. |

| Thanks for posting the recipe! My husband and son are sweet potato lovers so this should be a special treat for them...
