Donating YT 1000 Club Member | ![]() For this Fathers Day, we will be getting together at my brother's house, my sister in law asked if I could bring the Rum Cake I made for Christmas, I just can't find the recipe any where, it was very simple, with cake mix from a box. Can somebody help with recipes??

I knew better.....thank you ladies, it's the Bacardi rum cake, but I really would like to get the recipe with the coffee one, I have a House warming party on Saturday I can take that one, and leave the "strong stuff" for Sunday ![]()

| ![]() Best Ever Rum Cake 1 t. sugar 1 c. dried fruit 1 t. soda 2 large eggs lemon juice 1 or 2 quarts of rum brown sugar 1 c. butter baking powder nuts Before starting, sample rum to check quality. Good, isn't it? Now proceed. Select large mixing bowl, measuring cup, etc. Check rum again. It must be just right. To be sure rum is of proper quality, pour one level cup of rum into a glass and drink it as fast as you can. Repeat. With electric mixer, beat 1 cup of butter in a large fluffy bowl. Add one seaspoon of thugar and beat again. Meanwhile, make sure rum is still alright. Try another cup. Open second quart if necessary. Add leggs, 2 cups fried druit and beat til high. If druit gets stuck in the beaters, pry loose with drewscriber. Sample rum again, checking for tonscistricity. Next sift 3 cups pepper or salt (really doesn't matter). Sample rum. Sift 1/2 pint limon juice. Fold in chopped butter and strained nuts. Add one bablespoon of brown sugar - or whatever color you can find. Wix mel. Grease oven. Turn cakepan to 350 gredees. Pour mess into boven and ake. Check rum again and - bo to ged. Last edited by sammiz; 06-12-2008 at 11:22 AM. |

| ![]() Oh darn~! I was thinking a cake with coffee in it would be really good, LOL! Like a cake like this only without rum and coffee in the Cool whip? Hmmm.... Here's the Pina Colada Cake, but it's got rum in it too (and in the frosting also) but it's sooo good! Pina Colada Cake Ingredients: Cake: 1/3 cup dark rum (80 proof) 1- 4 oz pkg coconut cream flavored instant puddding 1 pkg white cake mix 4 eggs 1/2 cup water 1/4 cup vegetable oil Blend all ingredients in a large mixing bowl. Beat 4 minutes at medium speed. Pour into 2 greased and floured 9-inch cake pans. Bake at 350 deg. F. for 25-30 minutes or until cakes spring back when lightly pressed. Do not underbake. Cool in pans 15 minutes, remove and cool completely on racks. FROSTING: 1 can (8 oz) crushed pineapple in juice 1- 4 oz. pkg coconut cream flavored instant pudding mix 1/3 cup rum 1 (9 oz) container of thawed Cool Whip Beat all ingredients EXCEPT Cool Whip together until well blended. Fold in container of Cool Whip. Fill and Frost cake, sprinkle with 1 cup shredded coconut. Chill. Refrigerate leftover cake.
