| I had a salad and I truly enjoyed it! It was made with spring mix, shredded broccoli (you get in the package), carrots, celery, artichoke hearts, radishes, grape tomatoes, mandarin oranges, black-eyed peas (for my protein), and walnut pieces for the Omega-3 factor. I put Paul Newman's Lite walnut-raspberry dressing on it. Yum Yum! For my complex carbohydrates, I had a home made whole grain carrot,pineapple muffin.

| I am having roasted chickin with corn and peas and a wonderful gravy. I made it over the weekend when my girl was home visiting . .it is one of her favorite comfort foods so now am having some leftover - yummy! |

| We had lunch catered (almost a daily thing here in my office) from Newk's - which is like McAllister's for those of you who may have one near, but better! I had a half chicken salad sandwich, pasta salad, southern caviar, and a brownie - yum!
