| Thanks everyone! Here is the recipe: 12 oz of chopped or minced chicken 4 eggs 1 cup flour 1/2 tsp baking powder 1/2 cup of oatmeal 1/2 cup corn oil 1/2 cup grated carrot and cream cheese or yougurt for icing (I mixed p-butter and cream cheese together- she loved it) preheat oven to 350, grease and flour cake pan, finely chop or mince chicken, puree chicken in blender or food processor with eggs and oil, grate carrots and add to meat mixture and blend together, in seperate bowl put together flour, oatmeal, and baking powder, and gradually stir in meat mixture. Pour into pan and bake for 50-60 min. Can keep leftovers in fridge for 3-5 days I cut this recipe in half and put in muffin pan. It made 6 muffins. Perfect size for my little girl. I baked for 25 min and froze the leftover little cakes for another special day. |
