| Need Potluck Recipe My genealogy association is having a Holiday potluck in early December. I have gotten so lazy I just don't cook anymore. I have no idea what to bring. I don't eat red meat and tend to eat a low fat diet. Does anyone have any suggestions for something easy and healthy that a small group of ladies (probably 6-8) would enjoy for a lunch potluck? There won't be any place to heat things up unless I haul in my crock pot and plug it in, so I am thinking about a salad of some sort. Help please!

| I'm thinking salad because I won't have any way to heat something up. Ethnic is a great idea. Do you have any Scandinavian salad recipes? I want something easy, different, semi-healthy and really yummy.

I'm soooo sorry I didn't respond earlier - I can definitely get you a Norwegian recipe - that's Scandinavian - my daughter's paternal grandfather is 100% Norwegian and when the Daughters of Norway founded a chapter here last year she became a charter member and begged me to buy her this Norwegian cookbook

| I was thinking a big salad and have all the extra's (toppings, add in's, etc) in seperate containers.
