Great for leftover ham 1/2 cup melted butter 2cans of chunk pineapple 1 1/2 cup firmly packed brown sugar 2 tbs mustard 1 tbs Worcestershire 1/2 tsp salt and 1/2 tsp pepper 1/2 tsp cinnamon 1 1/2 cups raisins 30 maraschino cherries, halved 1 1/2 c chopped walnuts 8 c cooked rice Over med heat combine butter, pineapple juice, brown sugar after brown sugar dissolves, add mustard, Worcestershire, salt, pepper, and cinnamon. Stir in cubed ham. Simmer 10 min. Add pineapple, raisins, cherries, and walnuts. Simmer 5 min. Spread cooked rice in a 9 x 13 baking dish. Stir in some of the liquid into rice until its wet. Then top with remaining mixture. 350 degrees for 15 min |

BLT Bites These are YUMMY! 20 cherry tomatoes 1 lb bacon, cooked and crumbled 1/2 c mayo 1/3 c chopped green onion 3 tbs grated Parmesan cheese 2 tbs snipped fresh parsley Cut a thin slice off each tomato top. Scoop out and discard pulp. Invert tomatoes on a paper towel to drain. Combine remaining ingredients. Spoon mixture into tomatoes. Refrigerate. |
Turkey Hash A turkey hash recipe with leftover turkey, chopped celery and other vegetables, and turkey gravy. Another great use for leftover turkey. Ingredients: 1/2 cup chopped celery 1/2 cup chopped onion 1/4 cup chopped green bell pepper 2 to 3 tablespoons chopped red bell pepper 4 tablespoons butter 1 1/2 cups cooked turkey, chopped 1 cup turkey gravy 1 tablespoon chopped parsley salt and pepper, to taste Preparation: Saute vegetables in butter until limp. Add remaining ingredients and simmer until blended, about 15 to 20 minutes. The hash is better if made the day before, and it freezes well. Serves 6 to 8. |
I always bring the devilled eggs and cranberry sauce that I make with real cranberries, manderin oranges and pecans. I also bring a couple deserts...usually something different that I haven't brought before. This year I'm looking at recipes for Red Velvet Cheesecake and a Cranberry Apple Crisp. Oh, and my herbed dinner rolls...we can't have a holiday dinner without those and my devilled eggs. :) I like surprising everyone with new deserts and dishes but it's always something traditional or at least a new spin on an old traditional dish. Oh, and turkey/vegetable omelets for breakfast the next morning...those are the best! |

1 Attachment(s) Taste of Home Turkey Cheese Ball 2 pkgs cream cheese 8 oz each 6 ounces deli smoked turkey, finally chopped 1 c shredded cheese 1 tbs finely chopped onion 1 tbs Worcestershire 1/2 tsp garlic powder Decorations: 3 pkgs cream cheese 3 ounces each, softened 2 tbs milk Brown, orange, yellow paste food coloring 6 large oval crackers 1 large sweet red pepper 1 small yellow summer squash 1 cup pecan halves In a small bowl, beat the cream cheese, turkey, cheese, onion, Worcestershire and garlic powder until combined. Shape into a ball and wrap in plastic wrap. Refrigerate at least one hour. In another bowl, beat the cream cheese and milk until smooth. Divide among four small bowls. With food coloring, tint one bowl brown, one dark orange, one light orange, leave one plain. Transfer each to a heavy duty resealable plastic bag. Cut small hole in corner. For turkey tail features decorate the top halves of the large oval crackers with tinted cream cheese. Using red pepper, form the turkey head, neck, and snood. For beak, cut a small triangle from summer squash, attach with cream cheese. Add eyes, using brown and plain cream cheese. Insert pecan halves and decorated crackers into cheese ball. We're Texan - have to have giblet gravy - brown gravy just won't do. And it is not Thanksgiving without the cranberry sauce - even that awful congealed log with the can marks in it is better than nothing! We never have fishy items at Thanksgiving on our table. I don't think my Great Grandfather liked fish at holidays so the tradition stuck. |
