Mangos mmmm.... We have them here in abundance. I love to eat them with shoyu and vinegar. I love them green and ripe. Pickled mango is the BEST! I also eat them almost ripe...just cut a chunk off with the skin and crisscross cut them and turn them inside out. :) I don't like them over ripe. Those are best for MANGO BREAD!!! I have a great recipe for that! :D |

ok here we go! Mango Bread Ingredients: 1/2 cup butter (must use real butter) 1 cup sugar 2 eggs 1 tsp baking soda 1/2 tsp salt 1 cup mashed over ripe mango 1/2 cup sour cream 1/2 cup chopped nuts cream butter, sugar and vanilla extract, add eggs 1 at a time and mix till fluffy. SIFT all your dry ingredients in a separate bowl and add to the butter mixture taking turns with the mangoes and sour cream. Make sure you mix gently.(fold in) and add nuts last. bake for 1 hour @ 350 degrees |
Pickled Mango 1 gallon mangoes (sliced and green) 6 cups water 4 cups brown raw sugar 2 cups white vinegar 3/4 cups hawaiian salt 2 tbs. red food coloring Peel mangoes and cut in half through seed. Discard kernel, but leave outer shell attached to fruit. Cut fruit into bite size slices. Bring water, sugar, vinegar, salt and food coloring to a boil. Cook until sugar dissolves. Pack fruit into sterilized jars. Pour cooled syrup over it. And thats it! Enjoy! :D |
