10. Bring to a boil over high heat
11. Immediately reduce heat and simmer uncovered (stirring occasionally) for 10 minutes
12. Remove from heat and bottle

Yield: : 1 Gallon

Let me know how you like it. Bruce loves very hot sauce, I can't take the hot spicy sauces any more. Scotch Bonnets are really very hot, so make sure you use gloves when handling them - or make sure you don't rub your eyes before washing your hands thoroughly LOL

I read this and chuckled (I'm from Trinidad and the hotter the better). My mom makes her own hot sauce too and even eat raw scotch bonnet peppers.

Npo Bruce bought them at the Caribbean store - he is saving some of the seeds so he can grow his own. Our Jamaican neighbour grows her own.

There is a shop near me that has a whole room dedicated to hot sauces. If you are looking for something maybe they would have it, or maybe they could get it for you. I wish I could show you this pic in it's original size so you can see all the bottles. It is amazing.

Here are a few more pictures. I had no idea that there were so many different hot sauces until I saw this store. I don't know if you can see this in pic #1 but some bottles have I.V. lines attached to them. They had Elvis Presley hot sauce and hundreds of others. It was fun to browse in there.

Oh my gosh! I would be in Heaven in that store! :D I love hot things! We like to try different sauces for our chicken wing recipes.

You would go crazy in that store for sure. I wouldn't even know where to start.

No, it's a little shop in St Charles, MO called Figuero's. I think it is probably one of a kind. Here is a link to the shop. Maybe you could contact them and find out if there are any more shops. Figuero's Gourmet Coffee, Tea, Spices Herbs & Sauces, St. Charles, MO

I like any kind of hot sauce. I know someone said this is taboo way to eat an oyster but I like a steamed oyster on a saltine with a dash of hot sauce on the oyster. It is really good
