Just wondering if anyone has a really good Enchilada Sauce recipe? I love Enchiladas but the sauce in the can is just not doing anything for me anymore

Red sauce or green? I can ask my mom.

the green sauce is made with tomatillo and has sour cream in it, where as the red sauce has chocolate and california chiles.

Haha I saw the title and thought better ask Susana, then I saw you already responded. I've never made it from scratch, but I can tell when it's made or if it's bought. Personally I like the verde.

ETA I never knew the red had chocolate ( cocoa right?) maybe that's why I prefer green. I don't care for mole either.

Yeah I can only think about the green sauce it's done with Tomatillo verde...

ugh I just wasted like 15 mins looking for that bit from Charlie and the Chocolate Factory with the Oompa Looma dancing with the cocoa bean on his head. No luck.

If it's done right you can't detect the sweetness because the chilis balance it out

It's the bitterness that I don't care for. I've never really thought of it as sweet. Same with the mole, it's not sweet, but I just don't care for it.

I think the reason is bc what happened when I was a kid. There was a can of Hershey's cocoa in the cabinet. I didn't know cocoa doesn't come sweetened. So I opened up the can and got a spoonful and popped it in my mouth. That's when I found out. OMG the bitterness.

Gosh I couldn't get online.. I kept getting a message YT was down. I was getting nervous lol.

I will take both Recipes! I love Red Sauce but Green sounds super delish too! Can I adjust the spiciness level?.. I tend to be a baby lol

Definitely! My mom and dad's tolerance level has dropped now that they're older and changed their eating habits. Our red is sweeter than most, and so it the green tomatillo sauce. You can add as much, or as little chile to your recipe. I'll ask my mom for it when I get home.

I forgot to add, I've never seen my mom use actual cocoa. I've always seen her use this.

What are the ingredients in that? I see it says mexican chocolate drink mix, so there must be cocoa in there somewhere, but I bet there is cinnamon and some other yummy stuff in there, that's why she uses that instead of just cocoa by itself.

Probably. Maybe that's why I've never liked it myself. (the drink mix made into our version of hot chocolate)

it might be a while before I can get the recipe. I haven't seen my mom. I won't see her today either.
