Dinner on a budget This next couple weeks are going to be tighter for us and we are going to have to plan cheaper meals. What's some good cheaper meals you make when money is tight? I've got spaghetti on the list and chili. What else ya guys got? hehe Thanks... |
Bake Ziti is always good because you can usually get atleast two meals out of it. Grilled cheese and soup is always good and meatloaf! |

We actually do breakfast for dinner alot. Just eggs, bacon and hash browns, kids love it. Even pancakes are cheap. |

Sloppy joes, omelettes, tuna salad or egg salad sandwiches with soup. Here's a recipe for quick and cheap cheese quesadillas. Cheese Quesadillas Make these with flour tortillas. Heat two tortillas in a skillet and remove one to a plate. Top the remaining tortilla with shredded cheese. When melted, about 1-2 minutes, place the other tortilla on top. Allow to cook for a minute or so, flip the whole thing over and cook the other side for another minute. Dump onto a plate, slice with a pizza cutter. If you have it: Add shredded cooked chicken to the cheese. Serve with salsa. |
pizza wheels are always good! All you need is pizza sauce, english muffins and mozerella cheese and of course if you want pepperoni or mushrooms on it |
I make a pizza quesadilla.. Take 2 tortillas I use the low carb- Whole wheat ones, Put one in a skillet and add toppings, Pizza sauce, mushrooms, pepperoni. and lowfat cheese top with other tortilla and flip till cheese is melted.. Casserole! Anything you have left over, any meat, any cheese, any veggies, anything! Just put it in a pan and bake it! I also like to buy frozen white rolls (Rhodes Rolls, that's what I use), and I make hot pockets. You let the rolls thaw, roll them out, and stuff them with whatever you have around the house! Ham and cheese, pizza filling, rice and beans! One bag of frozen rolls goes a LONG way! I've gotta stop thinking about food, I still have a few hours of work left before dinner!!! Polenta.. my grandmother makes it.. Its cornmeal and water with sauce on top.. Heres the exact recipe: 9 Cups Water 1 Teaspoon Salt 3 Cups Cornmeal; coarse−grain|Bring water to a boil in a large heavy pot. Add salt and reduce heat until water is simmering. Take cornmeal by the handful and add to water very slowly, controlling the flow to a thin stream through your fingers. To avoid lumps, stir quickly with a long handled wooden spoon while adding cornmeal. If necessary, stop adding cornmeal from time to time and beat mixture vigorously. Cook, stirring constantly, 20 to 30 minutes. Polenta will become very thick while cooking. It is done when it comes away cleanly from the sides of the pot. Pour into individuals plates.. Tilt the plates to spread it out.. let cool for a few minutes.. Add tomatoe sauce and let cool again for a minute and eat! :) AND Soup.. Put some water in a huge pan add all veggies you have like tomatoes, celery, carrots etc.. And then chicken if you want.. Pretty much anything you have left over.. Buy in bulk it will cost less.. |
Beans and Rice burritos! Add stuff like cheese, sour cream, etc. Make a pot of meatballs and spaghetti. Then, the next night have meatball sandwiches. |
Tuna cassarole 1 bag noodles, 1 can tuna, 1can peas, 1 cup shreeded cheese (optinol) but good, and cup milk and 1 table sp mayo.... mix all ingred in a sause pan except noodles, let simmer for 10 min while you boil noodles, drain and add the other ingred, bake at 400 for 20 min top with crused chip and more cheese ( optinol) very yummy and last for at least 2 days;) |

Taco salad Soups and grilled cheese ** I'm making a big crock pot of chicken tortilla soup - i probably spent less than $10 to make it. It will feed my bf and i tonight, tomorrow, and probably one more meal. And it's delicious!** Trader Joe's has a cheap bag of frozen stir fry veggies and sauce. I buy that, along with a container of tofu (less than $2) and make some rice. It's delicious and healthy! |
A make a big pot of this when it's the end of the month and only scraps in the cupboards LOL cook up a package of wide egg noodles brown a pack of hamburger with a little purple onion cut up in it can of cream corn a package of shredded cheese salt and pepper mix it all up, it gets all melty and yummy This is my mother in law's creation, she makes this for get togethers because it's cheap and it actually is quite good. She calls it grandma's goulash |

Yes, we do have an Aldis in our town. I went there to get a few canned goods and bread. I think I spent like $5 total there and I got quite a bit. :) |

u know, my girls love "chicken N dumplins made with canned campbells soup and the "cheapie" pillsbury canned biscuitss... it only costs about $3.00 to make it and it feeds all 4 of us... boil 2 cans of soup with one can of water, turn burner to low, immediately drip biscuits(cut in quarters) into the water, put the top on, leave it for 10-15 mins, you are done.... wow, makes me want to make that... d |
Tater-tot cassrole (tots, hamburger, cream mushroom soup) Sketti - already mentioned top ramon - you can add some hamburger and maybe hard boiled egg Stouffer's frozen lasagna, it sells here for like $10 and I can get 2 nights out of it We dollar menu at McD's sometimes, dinner for like $10 all together, we drink water Soup - Safeway home made soups and get sourdough breadbowls Or tomato soup (any soup) w/ grilled cheese Tuna casserole - already mentioned Make a crock pot full of pot roast, tatoes, onions, carrots (this should last a few meals) Oatmeal for breakfast or toast |
