Anybody else cooking a BIG EASTER DINNER? What are YOU making? I have my turkey in the oven now, dinner is planned for 4pm, and I am unsure what else I want to make. In particular I would love to have some kind of cool salad or veggie dish. Any suggestions? Post your menu here! I'll start! Herb Roasted Turkey Mashed potatoes (with non fat milk and smart balance) Fat Free Turkey Gravy Cornbread Dressing with dried cranberries Some kind of salad thingy :p Some kind of veggie thingy :p Cranberry sauce Apple Sauce Cottage cheese pickles & olives Low fat biscuits (not hockey pucks, right Deb? ;) ) Dessert: Fat free yellow cake squares with chocolate pudding, strawberries, and fat free cool whip layered mmmmmmmmm I can't wait! We are going to my neices house for an Easter Brunch. I'm bringing salad and mini blueberry muffins. My sister is making ziti, another sister is making a zucchinni casserole, neices SIL is making quiche. There is a lot more food, but I don't know what everyone is bringing. Dang it Glad, now I'm hungry too! Have a Happy Easter! |

1 Attachment(s) Glad, Unfortunately, the beer bread is a box from Tastefully Simple that you just add a can of beer to.. LOL DOn't really have a recipe.. It's awesome though. You should try and find a tastefully simple consultant in your area. The stuff is great! Here's the cake that we're doing.. I just got it off a Betty Crocker website! INGREDIENTS: 1 (18 ounce) package Betty CrockerŽ Carrot Cake Mix 1 cup water 1/2 cup vegetable oil 3 eggs 1 (12 ounce) can Betty CrockerŽ Whipped fluffy white ready-to-spread frosting 1 cup flaked coconut construction paper jelly beans or small gumdrops 1 cup flaked coconut green food color -------------------------------------------------------------------------------- DIRECTIONS: Preheat oven to 350 . Grease (or lightly spray with cooking spray) bottoms only of two 8-inch or 9-inch round pans. Beat cake mix, water, oil and eggs in large bowl on low speed 30 seconds. Beat on medium speed 2 minutes. Pour into pans. Bake 8-inch pans 25 to 30 minutes, 9-inch pans 22 to 27 minutes. Cool 10 minutes; remove from pans. Cool completely, about 1 hour. Reserve one layer for another use or to make a second bunny. Cut 1 layer in half as shown in diagram . Put halves together with frosting to form body. Place cake upright on cut edge on tray. Cut out a notch about one-third of the way up one end of body to form head (small end) as shown in diagram. Attach half of cutout piece for tail with toothpicks. Frost with remaining frosting, rounding body on sides. Sprinkle with 1 cup coconut. Cut ears from construction paper; press into top. Use jelly beans for eyes and nose. Shake 1 cup coconut and 3 drops food color in tightly covered jar until evenly tinted. Surround bunny with tinted coconut. Add additional jelly beans if desired. Store loosely covered. |

Can I come to someones house? None of my kids are coming, only one of my kids lives close and they are going to her in-laws. So I'm not going to make a big dinner. I was going to work in the garden, but it rained yesterday so it is too wet. I might go and get some Scotts and fertilize and try to get rid of some dandelions. It's Ollie's bath day and toenail trim, and I might try to make some hair bows. |

I love this bread with homemade soup in the winter time and I use a dark ale so it has a strong flavor of the hops. The top is a little lumpy looking but reminds me of European bread - which I like... P.S. I don't know if you can substitute the butter - I somewhat doubt it but you are the expert on that.. I am cooking too!!! One of are family favorites is a veggie dish I use 2 large bags of the California blend veggies, (Cauliflower, broccoli, carrots) 1 large can cream of mushroom soup french fried onions, I use the large can, mix half to 3/4 in the mix and save the rest for the top Cheese, shredded cheddar, I used a mixed blend the comes pre-shredded from the store...lazy...lol Mix all the above ingredients together and put in a casserole dish or I use large 9-11 dish, sprinkle a bit more cheese on top, and then cook 350 till bubbly , I then add the last of the french fried onions to the top and cook another 10 minutes to crisp them up. My whole family lo9ves it, and I never have to force my kids to eat there veggies, and it is a different take from the traditional green bean casserole. |

We just got everything cleaned up!!! I made: roast, potatoes, carrots, onions (cooked together in the oven) gravy mashed potatoes ( my daughter doesn't like the roast potatos) :rolleyes: lime jello salad deviled eggs My mom made: homemade macaroni & cheese apple, banana, & pecan salad And I made banana pudding for dessert Mmmmmm good - but of course, we all ate too much!!! :D |
Fabulous!! Thanks, everyone, for the recipes and the menues!! These are awesome! I just got the potatoes on, the biscuit dough is resting in the fridge, and I just made the pudding for the dessert. CNN's "Two Marys" is playing on the kitchen TV... it's about the 5th time I have seen parts of it, lol! It's the kind of program you let run and catch the facts as you can. Pretty appropriate for Easter listening! Man, I am getting so HUNGRY!! And Jeanie AND Kimberly, come on OVER girls! :p EVERYONE is welcome, I think I am making enough to feed an army!! |

I cooked Ham Mashed Potatoes Green Beans Mac & Cheese Green Bean Casserole (husband loves it and only gets it at holidays, and kids won't eat any veggies but Green Beans...so we do both :rolleyes: ) Tossed Salad Cheese Garlic Biscuits (MIL brought these) Lemon Meringue Pie (MIL) Chocolate Cheesecake Now I need a nap!! :dogzzz: |
Hubby had to work all day and my parents had to leave early, so it will be just the three of us for dinner tonight. I'm heading to Glad's house, although she doesn't know it yet!!! LOL! No really, I'm grilling out steaks, baked potatoes, salad and something for dessert...whatever Morgan chooses. Got the steaks marinating now. The weather is beautiful, so anything to stay outside. |

We ate around 4:00 Dewaine fired up the smoker this morning and smoked 3 racks of baby back ribs and 4 pork tenderloins (I know what I will eat this next week!). I also cooked green beans with olive oil (be proud Glad) and smoked turkey for flavoring, corn and black beans with tomatoes, and potato salad made with very little mayo...mostly mustard...all pretty low fat! I was proud! My son, his wife and my grandson came over for the day and it was nice. Dewaine worked on the bee hive this afternoon and got his first bee sting! I guess he was excited :rolleyes: !!! He ain't allergic...I am :eek: !!! |

My family has an Easter meal that has become tradition. It's my favorite holiday meal since it's not so heavy. There can be other things, but we always HAVE to have: Heavenly Ham Mom's homemade potato salad Asparagus Today I had the out-laws and my parents, so we had Passover and Easter dinner. I also had... Salmon (with lemon, parsley and fresh ground pepper) grilled on a cedar plank Potato kugel Asparagus Matzo Brei Salad of mesclun greens, strawberries, toasted almonds and goat cheese with a basil and strawberry balsamic vinegarette For dessert we had strawberry shortcake made kosher with macaroons and an ice cream cake for hubby's birthday. I think desserts are always the hardest to make kosher. |
