Need help with dinner ideas! I am looking for meals that I can make and freeze, and re-heat to eat during the week. It seems that there is no time in the evenings to make a good homemade dinner, so I need recipes/ideas that I can make and freeze to eat during the week. Thanks! |
Meatloaf freezes well -- I make a up a big one (sorry no recipe - each one I make is different depending upon what I have in the cupboard and my mood). Nothing beats a good rich homemade Spaghetti Sauce -- it freezes well, but takes a long time to cook. I don't use recipes, but cook by the taste and error method but here is more or less how I make mine - its very simple and very straight forward. 2 lbs. lean ground beef 1 pod (yes the whole pod, not a clove) garlic chopped fine 6 medium onions chopped fine 1 bell pepper chopped fine (optional) 1 lb. chopped fresh mushrooms (optional) 6 large cans of roma tomatoes -- fresh is better (if you use fresh I guess it will take about 5 lbs - skinned and chopped. Dip tomatoes briefly in boiling water to make skin slip off. Water Brown ground beef with garlic, onions and bell pepper and mushrooms. Do NOT drain off fat - you will do that after the sauce has finished cooking and cooled. Add tomatoes and enough water to fill large stock pot. Let simmer all day long to cook and reduce. A spoon should stand in the finished sauce. |

We eat a lot of chicken at our house and I love to buy the Rotisserie chickens from the grocery store. I add them to salads all the time and also make chicken salad with them as well. Here is a quick salad that I love: Romaine lettuce Tomatoes Green peppers Red onion Cucumber (or whatever other fresh veggies your like) then add 2 cups of cooked pasta to the salad cup of thawed frozen corn can black bean drained and rinsed toss it all together and put onto a dinner plate top with cut up pieces of skinless chicken and tortilla topping Dressing I love Spicy Southwest Ranch (Paul Newman or Hidden Valley both make it) with any left over you can make homemade Chicken Salad Remove skin and chicken from bone put into large bowl chopped onion and celery mayo (I like half mayo/Miracle whip) dried cranberries chopped pecans mix together My kids will eat this either as a sandwich, with a fork or with lettuce and Raspberry Vinaigrette dressing. I literally make a 100 meals with a rotisserie chicken. :p |
Hubby is a trucker and only home on weekends. I don't like to cook for myself so usually when we do meals on the weekend I make a pile of food and then freeze it in portions for during the week. You can do a lot with ground beef, pasta or chicken. I also like salads and just add chicken or tuna. Go to allrecipes. com, there is a load of healthy, easy and quick recipes. |
I will sometimes cook a ham or a turkey and cut it up for different meals. I also do the bagged salads and add cooked meats to it for a more substantial meal. Baked potato with veggies and cheese makes a good quick meal too. |

Here are some I like to make and they freeze well: Chicken Divine Taco soup with chicken Beef Stew Saghetti with meat Meatloaf Also, Homemade Pound Cake freezes well, for a yummy quick dessert. |

I love these kinds of threads because I am also always looking for new and refreshing ideas. My family teases me that I am the queen of 101 ways to cook chicken. I will grill three or four packages of chicken breasts at a time. I season it differently, then cut up and store it for that week's meals or freeze it for later. We eat a lot of chicken enchiladas, oriental chicken salad, chicken salad sandwiches, chicken alfredo, etc. Chicken enchiladas and chicken alfredo freeze well. |
