Does anyone use chicken soup? Take a can of chicken soup, a small tub of sour cream, a can of enchilada sauce (red) mix together, (if it is too thick add a small amount of chicken broth or another can of enchilada sauce) and spread that over the top of you enchiladas/burritos top with cheese (or mix the cheese into the sauce mix) and bake! |

By the way, your Spaghetti sauce was a HIT TONIGHT..My husband ate 2 large bowls. I have never used a whole Pod, but it worked. My neighbor is from Italy and they use lots of Garlic,Oregano and Basil. Thanks so much and I froze the rest. |
This is not a recipe, but a really good timesaver for lots of weeknight meals. Brown ground beef, put in ziplock freezer bags in 1 pound portions and freeze. This can be used for a quick spaghetti sauce ("doctor" a jar of it), sloppy joes, tacos, american chop suey...you get the picture. It's a HUGE head start for me. The same can be done for cooked chopped chicken breast...just cook some in a fry pan (diced) and freeze in 1-cup portions. You can also put the 1-cup portions in large muffin tin cups, freeze for 1-2 hours till firm without falling apart, then pop them out of the tin and put all in one freezer bag. They'll stay separated and you can grab however many "cups" you need when it comes time to use it (chicken soup, enchiladas, chicken salad, stir fry, etc.) |

Meatballs freeze well and will go great with that delicious sauce recipe. Here is a quick & healthy meal chicken breast or thighs jar of salsa and brown rice place chicken in a cassorole dish, pour salsa over it and bake for 25-30 min on 350 and serve over rice. Boboli pizza shells with lots of veggies and some mozzerlla Great thread~ |
What I do for dinner is...I take some cereal -and- I place it in a bowl. Done. :D I'm sorry...I'm worthless here, but still wanted to share :). |
Home made vegetable beef soup is easy to make and freezes wonderfully. Make up a red sauce and freeze in several containers that hold enough for one meal for the family. Then all you have to do is boil up either spaghetti or mezze penne, or you could cook some rice, add some sauce and fill cleaned out bell peppers, wrap in foil and bake at 350 for 45 minutes. Meat loaf, turkey loaf and even a meatless loaf is easy to make and also freezes great. Buy a large bag of frozen diced potatoes to keep in the freezer then use what ever it takes for your family and saute some onions and add the potatoes along with some type of sausage, like chicken or turkey, sliced in bite sized pieces, then you could even add some frozen peas to make it complete. Very easy. Buy a couple small cans of clams, a jar of Bertolli brand Alfredo sauce. Cook some spaghetti, add the clams to some of the sauce, heat and put over the spaghetti. Either throw in some frozen peas and carrots or make a salad. Easy!! |

Sounds like work. I just go in the cupboard and grab a protein bar. I do have to unwrap it though.:thumbdown Or if I'm really ambitious, I'll microwave a Lean Cuisine. |
