Roast beef help So i want to make roast beef for christmas eve or new years eve dinner and I don't know what cut to use?! I want something with lots of beefy flavor and great rare to medium...any suggestions? :confused: |

What you want...is a standing rib roast. That is the cut. If you don't have a meat thermometer...get one because the inside temp will tell you the amount of doneness. It's pretty much fool proof...and omg wonderful. :) It's a pricey cut of meat but you'll usually find it on sale closer to the holiday. Last year right before the 25th...I found them 1/2 off...I grabbed a couple to stick in the freezer. Here's a link giving cooking times for various sizes. I think the key to a good roast is the cooking method. Here's how I cook mine. I flour and brown both sides in a heavy oven safe pan with a lid. Then I add a little water to the bottom, cut up potatoes, carrots and onions and place them around the roast. Then I cook the roast (lid on pan) in the oven on 275 for about 3-4 hours. MMMMM.... it is really good, no matter the cut you use!!! |
