When I make this for hubby, I sometimes use turkey chop meat instead of beef. I don't measure the ingredients. I just eyeball them. Chop Meat (Turkey or Beef) Grated Cheese Bread Crumbs 1-2 Eggs (depends on how much meat you use) Onion, Diced SMALL Peas (From a can or frozen) Italian Seasoning Salt + Pepper I also cut up carrots, mushrooms and yams or red potatoes diced. I then pour 1 small can of tomato sauce and some water on and around the meat loaf. Be sure to cover the veggies and potatoes so they don't dry out. Cook on 350 for at least an hour or longer, again this depends on how big your meatloaf is. This is one of my hubby's favorite dishes. :D PS - You can get really creative. Sometimes I put peas and mushrooms INSIDE my meatloaf. One time, I wanted to try something just for fun and I added a can of salsa to my meatloaf (mixed it in and poured it on top). Came out sooo good, hubby went crazy for it! :D |

I make mine similar to this one. After I form the loaf, I poke holes in it and put chunks of Velveeta or another american cheese in it....and then close it up. I cover it with ketchup. After it is baked...at about 45 min to one hour at 350, I remove it immediately from the pan so that it does not absorb the grease. I also serve it with brown gravy...the canned gravy. I get rave reviews from it! I think it is the cheese that really makes it! |

ROTEL Meat Loaf |
I've seen recipes that they put hard boiled eggs in it..I don't think I would like that. |

Yes, I know this thread is old but I was trying to put together a meatloaf for tomorrow night and I realized that I took my recipe to work to add to a cookbook the family is making and I forgot to bring it home. It's this one. I knew I had gotten it on here so I came to search for it. Only thing I couldn't remember was how much ketchup was in it. I just gotta say, this is the easiest and tastiest meatloaf I think I've ever had. My family loves it! I don't use the glaze though. And I do double it. Super, super easy...... I highly recommend! I see that the original poster is "banned" but wanted to give my 2 cents in case anyone wanted to try it. And I think it may be mentioned somewhere in this post but I wanted to share that if you put two pieces of bread under your uncooked meatloaf before you bake it, most of the grease will get soaked up by it. Great idea. |
