| This is what my son canned just for me! My oldest son (who lives in MN.) emailed me Tuesday and told me he was canning most of his garden and was mailing me my favorite........PICKLED BEETS!! How's that for a single guy. I just got them a little while ago and oh my Goodness are they ever fantastic!!!!! I've eaten my share of pickled beets in my day but these are THE best I EVER had!! Would love being able to share with those of you who like these. My hubby won't touch them.

| I ate one whole jar for dinner and put a boiled egg in the juice. I LOVE pickled eggs too. Jerri, your going to get the other jar if you promise you will save it just for yourself!!!

| What a blessing your son is to you! I always thought I hated pickled beets until my friend talked (and talked and talked) me into trying them. I LOVE them! I was truly very surprised about that. |

| Is there any way you could ask your son for his recipee. I tried to do that last year, but they didn't turn out so great. They were good, but too sweet, not sour enough.

| i'm so jealous! i love beets, always have! my husband was a weenie and wouldn't eat them at all. finally (recently) he agreed to let my stick some of the pickled ones on his salad. he's hooked!! i like pickled almost everything EXCEPT pickles! eggs, cabbage, the 'hot mix' with the cauliflower in it, asparagus, carrots, etc. my favorite pickled treat was when a friend from hawaii's mom sent her some pickled mango. she shared it with me. ... i need to get some more of that! |

| This thread is not only making me hungry but bringing back a lot of memories. My dh won't taste anything that's pickled at home. From the supermarket yes and we all know there's no comparison. When I was a child living in the NC mountains everyone made pickled green beans and they were wonderful then but I don't know if I would like them now. Sure would like to find out though.

| i think they may sell them in Kroger...i'm not sure if kroger reaches to NC. i'm pretty sure i've seen them at HEB too, but i think HEB is a tx thing. i haven't tried those...i bet i would like them too! |
