Ideas for dinner tonight I need some ideas on dinner tonight can you ladies help me out. What are you having. Thanks! |
Good question! I've been thinking of what to cook tonight too... Last night, I prepared this chicken dish that was really good. I chopped up some tomatoes and artichoke hearts, put them in a saucepan with a little olive oil. Added salt, basil, and oregano. Once that was done, I transferred it to a bowl and added mozzarella cheese. Next, I pounded the chicken breasts to about 1/4 inch thickness. Put some of the mixture in the center and rolled up the chicken breast, and placed it seam side down into a baking dish with a lid. Put some marinara sauce on top.... I let it cook in 350 degree oven for about 40 minutes. |

Chicken churritos its a name i made up for a wet burrito I just pick boneless skinless chicken dark/white mix i sear it in olive oil and then after it is brown i cover with water and simmer until it falls apart. I do add tomatoes and onions and garlic while it is simmering. once it is cooked and falling apart i take the lid off and let most of the liquid cook off. then i take 2 forks and shred the chicken/onion/tom mix. gives you plenty of time to Yorkie talk while it is cooking;) i take a tortilla spread on some fat free refried beans out of the can. spinkle on a tablespoon or so of raw chopped onion and then top with the chicken mix. i roll it up and put in a rectagle baking dish. i continue until they are all lined up in the pan and then i top with enchilada sauce and cheese. since everything is cooked and somewhat warm, i just put it in a 350 oven until bubbly. 20-30 min. i serve with shredded lettuce, chopped tomato and sourcream and if i have time homemade guacamole. i let everyone do their own toppings. i eat like a half of a churrito but make like a big salad on top I have never met anyone who did not love this when i made it!! :D:D |

i forgot to add that it is best to make sure that the entire tortilla is at least painted with the enchilada sauce. it keeps the tortilla soft. you can use WW cheese too and fat free wraps. yum:mtongue: |
I'm not sure what kind of meat we are having tonight. We are going to my brother in-law's house to celebrate my mother in-law's birthday with family. But I just made a potato salad and a macaroni salad with cucumbers, green onions, and tomatoes (Yum!) That I am looking forward to eating. We will probably go swimming and then have burgers from the grill is my guess.:) |

I make up an entire monthly menu by looking thru all my cookbooks and also making up my own tried and true recipes, then write down all the ingredients I may need to make the months recipes and then go grocery shopping. I never have any days that I'm at a loss for what to fix. The months menu is on the ref. and that way I know if I need to take anything out of the freezer the night before. Not to mention I cut over $150.00 a month off my grocery bill by doing this. It's also for my own peace of mind. I hate always trying to figure out "what" to fix. :confused: Tonight is Chicken apple sausage with fat free vegetarian Biryani curried rice dish. I always add broccoli, more bell peppers and capers to this dish. |
Probably a sandwich and some pasta salad. Now, if my boyfriend were home we'd probably be cooking out, chicken and baked potatoes or steak and baked potatoes with some good corn on the cob. |
We are having boneless country style ribs on the grill with bbq sauce. I boil the ribs for about an hour so they are really tender, then put them on the grill with bbq sauce. I am also making twice-baked potatoes and corn on the cob and salad. All these recipes are making me hungry. |
everything sounds so yummy. Yorkiedaze- I have been thinking of doing a weekly or monthly menu since my daughter begins school this year and my work schedule has changed. |

We're grilling "burgers" which means a burger for hubby, a portobello for me and a Boca burger for my daughter. We don't agree on what defines an acceptable burger,lol.:p Not sure what we'll have with it, maybe grilled zucchini. |

Last night I made the Chicken Parmesan that's on this month's Bon Appetit cover~ It was DELICIOUS! I would have been happy with a whole lot less cheese on it, but the tomato sauce alone was fabulous! And I made caramelized brussels sprouts (first time making and also yummy), and buttered noodles. Cuban Espresso Creme Brulee for dessert. Tonite I'm doing the carnitas recipe with a pork shoulder. And will serve it with sliced heirloom tomatos and basil and a cabbage salad. Homemade fresh peach and cinnamon ice cream for dessert. Tomorrow dh goes back to work for the week, so I'll be back to leftovers and sandwiches probably, LOL. |

Hey is that rice from Trader Joes?? I buy that frozen in a bag at Trader Joes all the time. I like to add a fistful of chopped walnuts in while its cooking. Sometimes I'll just have that for dinner, I LOVE IT!!! :) I just found a recipe Im going to try tonight. Chicken & fruit pockets. You make tin foil packets and use boneless skinless chicken breasts, add slices of peeled and cored pears and granny smith apples, drizzle with honey mustard dressing, minced garlic and thyme. Close packets and cook for 30 mins on the grill. Sounds yummy to me! I'll let you know! |

Spicy chicken pasta salad My version of CHILI'S Quesadilla Explosion Salad :)This is really good, super easy and will feed my entire family..... 2 cups cooked pasta 2 cups chopped romaine lettuce 1 tomato cut up 1/2 Red onion thin sliced 1 cucumber cut 1/2 cup frozen corn 1 can black beans drained and rinsed *I usually just toss them in a colander together and rinse in cold water Plus 2-3 boneless chicken breast grilled and cut into strips **I have been using the George Foreman grill a lot lately for this type of quick grilling Toss all ingredient together in a large bowl. Top with Hidden Valley SPICY Ranch dressing instead of croutons toss on a few fritos! It the time it takes for the pasta to cook, you can have all your veggies ready so it's super easy to make and will know their socks off! |
