I figured it out-we're having quesadillas with a kind of "cowboy caviar" (corn, black beans, peppers, tomatoes, avocados, garlic, & red onion all marinated together) on the side, with tortilla chips and sour cream. |
All I saw was black eyed peas and corn bread and I had to click on this thread lol I wish I could have that with a side of candied yams. I have no clue what I am having, since I am not the cook:p |

YUM!!! That Cowboy Caviar sounds great!!!!!!! I might have to try that sometime soon! The chicken enchilada cass. is super easy. I boil three large or four small chicken breasts, shred them up and put about two or more cans of enchilada sauce (I use hot) and a can of diced green peppers in the bowl and let it soak a while. Then I layer it with corn tortillas in a casserole dish, top it with lots of cheese and bake it at 350 until it looks right (an hour maybe???) Then I top it with fresh tomatos and sliced olives and bake a few more minutes and when I serve it I top it with avacado and sour cream. Yum-O! We should start a daily recipe thread.... |
I played on the computer too long so we ended up eating leftovers. Hubby is out of town but gets home tonight so I'll make my stuffed zucchini tomorrow. |
What's with the Okra! haharofl I made a tuna noodle casserole and pepperoni casserole Sunday so I could be lazy and not cook today..told the kids to eat LO's tonight. |
I bought a smoked chicken from a local bbq joint. Then I fixed home grown summer squash, asparagus (bought at the store), and home grown tomatoes. I fixed hubby some potato salad - I'm dieting so I didn't eat any, but he said it was GOOD! |
I made a hamburger on my new Big Green Egg...has anyone ever cooked on one of those?? They're great! The hamburger was wonderful! :D |

It's from a neat little eco-blog called the Daily Green. DISCLAIMER: I haven't made it yet and when I do I won't follow the recipe exactly. For example I'm going to use fresh thyme and not use cumin and veggie broth instead of chicken. I'm making it tonight so I'll post how it turns out.:) |
