so what's so bad about Okra?? anyway, I found a recipe for Crock Pot Chicken Gumbo Here it is in case anyone's interested: CHICKEN GUMBO OVER RICE INGREDIENTS 1/2 cup olive oil, divided 1/2 pound Italian sausage 1/4 cup all-purpose flour 1 pound boneless, skinless chicken breast tenders 1 cup chopped onions 1 cup chopped celery 1 cup diced green bell peppers 2 tablespoons minced jalapenos or serrano peppers 1 teaspoon paprika 1 1/2 cups orka, cut into 1/4-inch slices 1 cup chicken broth 1/2 cup white wine 2 cups cooked rice Cook Time: 7 to 8 hours (LOW) or 3 to 4 hours (HIGH) 1. Cut sausage into 1/4-inch slices. Heat 2 tablespoons oil in skillet over medium heat until hot. Cook until no pink remains. Transfer to papertowel-lined plat with slotted spoon to drain. 2. Heat remaining 2 tablespoons of oil to skillet. Add flour and continously stir with a whisk. Cook until flour becomes dark drown but not burnt. Add chicken, onionsm celery, bell peppers, chili peppers and paprika. Cook and stir 7 to 8 minutes, or until vegetables soften. Transfer to 4 1/2 quart CROCK-POT slow cooker (or whatever you have;)) 3. Add drained sausage, okra, broth and wine. Cover; cook on LOW 7 to 8 hours or on HIGH 4 to 6 hours. Serve over cooked rice. MAKES 6 SERVINGS TIPS: Try this gumbo over cooked brown rice Hope you guys enjoy! |

breaded okra is one of my FAVORITE things!!! I have a HUGE jar of pickled okra in the fridge. mmmm mmmmm mmmmmmmmmmmmm |
