| ![]() We always do Christmas day at home with me and hubby and kids. We don't go anywhere. We do all our running/visiting/Christmas Parties before. We are sooo busy the week before, that since Lauryn was 8 we decided it wasn't fair for her to get up, open presents and be gone all day long (not able to play) He has divorced parents, so we'd have to go to my parents and both his parents all on Christmas day. Since making this tradition, Lauryn is now 15 and Lexi is now 4. lol We really enjoy the day at home. We stay in our pj's most the day, I make Christmas Dinner and we play with toys all day long and watch Christmas movies. lol (so much fun!!!) Well this year we all decided that we are burnt out of ham, turkey, and all that stuff since we've been eating it all week long....lol So we are going to have a Mexican Christmas Dinner. I need some really good Mexican Food recipes. We want to have Beef and Chicken enchiladas. If you have any dessert ideas I'd love to hear them too. I did find one where you make cinn/sugar chips and fry, them dip them in a strawberry icecream/cream cheese/ powder sugar/fresh strawberry dip. (sounds good) Thanks sooo much!!! |

| ![]() Denise, I haven't made chicken enchiladas, but beef enchiladas are SO easy! I have been making them like this for years and they go like hotcakes. I use 2 large cans of enchilada sauce. open cans and pour sauce in a plate bowl or cake pan. Fry up 2-3 pounds of ground beef and drain. chop 1 large onion and set aside. Grate LOTS of cheddar chees and set aside. Now I use a 9x12 cake pan and pour some of the enchilade sauce in the pan to cover the bottom. Now you can start the assembly line. Take a corn tortilla, dip it in the bowl of enchilada sauce to coat it well. place the tortilla shell in the 9x12 pan close to the edge. place a couple of tablespoons of ground beef in the center of the shell, then spinkle with some of the onions, then sprinkle with chees. Fold up the sides and fasten the enchilade closed at the top with toothpicks. Continue making enchiladas in this manner, lining them up side by side until the pan is full. Then pour additional enchilada sauce on top of them (not too much) then sprinkle with a few onions and more cheese. Bake in a 350 oven for about 15-20 minutes until the enchiladas are bubbling and the cheese melts. Let stand at least 5 minutes before serving. This will probably make 2 pans full. You can also use the remaining beef onions and cheese to make tacos to go with them.
