I agree with you that both legs done at the same time is best. Small dogs seem to heal fast, so they can handle both at the same time. Grade 3 and the limping, she is in pain and discomfort, so you are doing the right thing. It also sounds like you are having a Board Cert. Ortho Vet do the surgery, which is great! Please make sure they are doing the Cut & Pin type of LP surgery. IMO just deepen the grooves is not worth put her thru all that. It really is best that they do the Cut & Pin and also deepen the grooves and tighten the ligaments.
I will not lie, recovery is very rough, especially the first 2 weeks. Confinement is VERY important. As weeks go by, she will have a little more walking time, but it is very important to let her legs heal. After a few days, she will start to act normal, DO NOT LET this fool you, she is unaware that she just had very expensive surgery on both of her knees (lol)
