Recent food or cooking discoveries? After pruning my herbs, I found that putting them in a container of cold water and storing them in the fridge keeps them really fresh and crisp for days, even reviving some mint that was completely wilted. Works much better than wrapped in a wet paper towel in a plastic bag. Also found that using honey on clippings as a rooting hormone really helps to grow the clippings into new plants. Lastly, chickpea flour instead of all purpose flour for deep frying, makes everything really crispy and not oily, and even some fish that I had leftover was still crisp the next day. Just had to pan fry it a bit with some Pam and made it totally crispy again. Added benefit is that chickpea flour is basically ground garbanzo beans, so no added carb, but instead added protein! Great for celiacs. |

Awesome discoveries! Thanks for sharing. My mom recently brought me some fresh cut asparagus and she put them cut side down in a dish of water in the fridge too. I was amazed at how long they stayed fresh that way! |
That's so neat! Wanting to plant some herbs & tomatoes in our yard, will use your techniques. We have green bell peppers currently & I put them in a brown bag, it's turning red! It's sweeter & has more vitamins, they're delicious. |
Wow I didn't know green bell peppers turned into red ones when ripe! I don't really care for green ones, but love the red ones. It's kinda late to put in tomatoes in your garden now, unless you can find plants still at your nursery. BUT make sure you check your plants daily for caterpillars. I found four of them that decimated mine. Get a few bird feeders to attract birds and they eat the bugs. Or get a praying mantis (those are all sold out at my nurseries too). I found about 6 more baby caterpillars today when I was working in the garden. ARGH! |
So far the cuttings I've planted using honey as a rooting hormone has turned out pretty well. Worked better on the chiles and basil than mint. It's ok though bc mint grows like a weed anyway. I also tried it with a firecracker plant aka hummingbird bush, and seems a ok so far. Every single cutting or pruning I do that looks decent I keep to try to root. Hopefully soon I will have so many herbs I will have to gift them to people. Also the herbs in the cold water are still doing just fine! I add some clippings to the container every few days and I use them often too. It's like a steady stream of fresh herbs constantly! :) |

I made a beet and cauliflower casserole. It was absolutely delish. I pre-cooked the beets for about 25 minutes - I did not add sugar to the water as the beets this year are so very sweet. Make Cauliflower florets - I used 3/4 of a head of a large cauliflower. One 10oz can of Cream of Mushroom condensed soup. I selected the low sodium one. I added - one large portebello mushroom - sliced in thick pieces 3 oyster mushrooms - sliced thickly 1 Medium sized onion diced 1/2 c of both Gruyere and Old cheddar cheese = 1 c of cheese - grated 3 cloves of garlic - minced up S+P to taste Bake at 400 degrees for 40-50 minutes. Out of the oven I sprinkled fresh parsley over the top. I used about a 12" Au gratin pan. If you like beets you will love this easy casserole. :) |

Thanks to my mother in law, I loathe beets but I have always been one to give every food a first, second and third try especially when its a healthy food and especially as there is isn't much that I do hate (as evidenced by my physique...LOL) I will definitely try this recipe as a new spin on beets and give them another try!
