The Chicken Diaries Part One: Austrian breaded fried chicken Okay, now for my chicken disasters, lol! PROS: 1. The batter stayed on! 2. It tasted great! 3. DH and DS both ate it and raved about it! Cons: 1. My oil was too hot. I used Crisco shortening. I burned half of the breading (but the chicken itself still tasted great) I used a stainless steel fry pan. I have a glass top stove. Not so much a con... I just need to remember the settings, which at two ticks below the medium notch it seemed to cook the best without burning. I tried this recipe first because when I was 14, many, many, many years ago, my family took a trip to NYC. We ate at a restaurant called Luchows, a fine German eatery, and a few years ago I started researching German recipes, trying to find the recipe for whatever it was I ate that night. So as this is an Austrian recipe, it really caught my interest, plus I had all the ingredients on hand, lol. |

Oh...and always use a meat thermometer to check the temperature of the chicken. That is the best way to see if it is done. |
You know.. Being a southern and being a cook (well I do teach home economics- food productions) you would think I could fry chicken. But my dh does not like fried chicken thus I really have lost the art! Yum.. Southern fried chicke is the best... I think the secret (besides the spices) is the oil. You have to haven enough oil and it has to be the right tempature to seal the breading and keep the chicken crispy and insides moist. I am sure to check out lj links .. |

It turned out nice and crispy on the outside (not so crispy as to break my teeth on) and juicy on the inside! Maybe a bit browner than I'd like it, but it tasted great! I have been using Mayo and Italian bread crumbs. I find the Mayo helps the bread crumbs to stick. I also really like Chicken that marinates in Italian dressing for about 3 or 4 hours and then throw it on the grill. |
