bWY39 posted great pics!!!! I LOVE me some fat back thick bacon! I have never gone back to stringy bacon. Your pics just inspired me to ditch the bowl of raisin bran and make some bacon beans in the crock pot!!!! Pics to come! I seriously use this thread (and a couple others) as my own lil inspirational cook book! |

Bacon beans...YUm! 3 Attachment(s) I start the easy way with canned precooked pints, garbanzo, kidney and black beans. 1. I strain all but the black beans and use their 'juice" as flavoring. 2. I use American fat back or tick bacon-not as tick or wondrously wonderful as English fat back bacon, but better than stringy or Canadian (Hawaiian is closer to English). I cook the bacon separately in a George Foreman grill partially first (I don't like greasy food anyways) then I microwave it another 30 seconds just to be sure I kill anything as this isn't Kosher mean. The bacon gets set aside and goes in last. 3. I sweat red onions right in the crock pot with a quarter of a butter cube cut up. I leave it in there on low (the whole time lid on) for 30 minutes to 1 hour depending on how it does. |
bacon beans...YUM continued 3 Attachment(s) 4. After the onions, beans and butter have began to "melt" or "sweat" I add in bell peppers and celery. I prefer the mini bell peppers in red, yellow and orange ans they are sweater than the large ones. 5.I never measure seasonings I just cover the top mix it in and taste. 6. I let that go for about 30 minutes to one hour until the bell peppers and celery are soft but never let them get mushy. I add in my spices: peppercorn black pepper, sea salt, Italian seasoning, and Morton's Table seasoning-I also add some Italian dressing for some tang (I occasionally add in about a table spoon of soy sauces, a tab bit of brown sugar and maybe a Knorr chicken bullion cube). |
bacon beans Yum just eaten...again 1 Attachment(s) Anywho...that's what I just ate as an after-midnight snack for the second time today... I usually only cook it for no longer than 2 hours on low with the bacon in it, I top with shredded Colby jack and biscuits...which yep i totally almost burned (need new over). Dark pic the lights are mostly off here now, just got baby back down and totally pigging out, again! It's yummy! :) Edit:OH!! I add another quarter cube of butter with the bell peppers sometimes too...butter and bacon...so good! |

I wait till we go to bed early then we sit and read in bed for a time. I then say to Joan, "darlin, I just fancy a bacon butty" and as I get up she will always say "OK if you are having one I will join you" so I make one with a runny egg. The end result is amazing the rest is for your imagination....lol |
