Simple Recipes? Anyone have any easy to make, low ingredient recipes? When it comes to cooking if it gets complex, or requires too many ingredients then I most likely won't be making it. But I need to start eating right again, frozen dinners and fried chicken just isn't cutting it anymore. Ideas? Suggestions for outside websites? Thanks! |
Here is a recipe from Giada on Food Network. It is very simple to make and is also good made with cubed chicken instead of shrimp. Just cube the chicken, stir fry it in the pan then add the remaining ingredients. It is so yummy.... Nonna Luna's Rice Recipe : Giada De Laurentiis : Food Network |

lettuce wraps My family loves PF Chang's lettuce wraps. I searched online and found several recipes. When I went to the store I saw a packet for lettuce wrap sauce and it was wonderful. Now, I won't bother making my sauce from scratch. It was so easy to make. I just used ground chicken, green onions, 1/2 can water chestnuts and peanuts, with bib lettuce. It's Lee Kum Kee, Panda Brand, Lettuce wrap sauce. Directions below. Directions Preparation Time: 6 minutes. Cooking Time: 6 minutes (makes 4-6 servings). What You'll Need: 1 lb ground chicken or ground pork; 8 oz can water chestnuts, drained and chopped; 4 green onions, chopped; 1/4 cup roasted peanuts, chopped; 1 (4 oz) carrot, diced; 1 head Iceberg lettuce, separated into rounds; 2 tbsp cooking oil; 1 pouch Lee Kum Kee Sauce for Lettuce Wrap. 1. Heat oil over High heat in a large frying pan or wok. 2. Add chicken (or pork) and stir-fry for 2 minutes until browned. Add all vegetables, peanuts and water chestnuts. Stir-fry 2 more minutes. 3. Add 3/4 pouch of Lee Kum Kee Sauce for Lettuce Wrap. Bring to a simmer, and add green onions and peanuts. Scoop the mixture into a lettuce cup. Save remaining sauce to serve at the table, then serve. Use remaining sauce per taste. Store in cool, dry place. Once opened, consume immediately. |

Anyway, this is my take on it (baja style), but there's lots of variations. I make it from memory and I don't follow a recipe, so I'm guesstimating here. 1/2 bag frozen jumbo shrimp (18-20 per lb, somewhere around there), raw, shelled, head on or off doesn't matter, depends on how much work you want to do (just make sure they are raw) 2 large ripe avocados, diced 2 large tomatoes or 4 roma tomatoes, diced 1/4 brown sweet onion, diced finely 1/2 cup drinking water 1 stalk green onions, chopped juice of 2 limes (more or less to taste) or 1/2 to 1 of lemon 2 to 3 tbsp ketchup (to taste, to thicken) your favorite hot sauce to taste (I use Tapatio or Cholula) salt and pepper to taste cilantro is optional (in my recipe), only bc I HATE cilantro, but like 100% off mexican dishes have it, so there you go. You can also sub or add in your fave type of vinegar for a different type of sourness, or add red pepper flakes as well. Make it up as you go. Clean and cook the shrimp, and cool them. Mix all the ingredients together. I like to keep the shrimp separate bc the lime will continue to cook the shrimp and they will get chewy. Add the shrimp when it's serving time. If you're going to store it for a day or so, keep the shrimp separate again. Many serve it with saltine crackers, which I don't get, they disintegrate. Tortilla chips make much more sense! Leave a few shrimp or slices of avocado for a pretty garnish on top, otherwise this is a soupier looking cocktail, not like a shrimp cocktail you order at a steakhouse. But its' WAY better! Add in some diced mango for a sweeter variation, or cucumber for more crunch. Octopi lover? Add in some tentacles! How about some oysters? |
I made this chicken dish the other night and it's only 4-5 ingredients total: 1- grill chicken on a grill/or I guess you could use a barbeque in the summer. 2- coat with chicken and rib sauce when almost done. meanwhile: 3-boil greenbeans in a pot for 2 min, just to start the cooking. 4- put a bit of extra virgin olive oil in a pan, transfer green beans. 5- once they start to cook, mix a bit of Franks red hot sauce (about a tsp-tbs or in my house a "blob") and orange juice (3 tbs ish or a "glug") mix, if you need a bit more liquid to get all beans coated add a tiny bit of water, pour over beans, and cook in frying pan/wok until finished and barely any liquid is left. Sorry when I create or modify recipes I don't measure... But it's a really tasty dish. I'll see what else I can dig up, I made a cook book for one of my girl-friends who aboslutely couldn't cook and her boyfriend called and thanked me cause now she cooks for him. :p |
