Chicken and Dumplings Man, Im craving some....I haven't had any in a long time,since my Dad passed. I use to make them for him all the time. I don't make them anymore because my DH doesn't eat them. Mine were never all that great,anyone have a good recipe for them? |
That is so odd tht you mention C & D. I had planned to make some tonight -- chicken is all cooked and ready -- but I got distracted. We will probably have them tomorrow night along with green beans and cornbread. I am sorry about losing your Dad..... I know it must be very hard to deal with. I don't have a recipe written down, I make my dumplings from scratch just the way my mom and mil taught me :) |

I love chicken and dumplings well my moms anyways lol!! I have never tried anyone elses but when she makes hers she has to make a huge pot for all the family! |

Man oh man do I love chicken and dumplings! Do you like the flat dumplings or the biscuit dumplings? I was raised with the flat but in college I worked as a waitress at a restaurant that made the biscuit dumplings and now prefer those. If you like the flat kind you can just buy them in the frozen section of the grocery like my Mom does.;) My grandma makes them from scratch and I can't tell the difference. Here's how I make mine which is crazy easy- I boil a whole chicken because I like some dark meat in mine but obviously you could just use breasts. I chill the broth so the fat solidifies and I can scoop it out (I have skipped this step). I take a can of Grands butter biscuits, cut them in quarters and throw them in a ziplock bag with flour. I boil the both and add the biscuits and cook them till they're just about done. Then I add my shredded chicken and dried thyme, salt and pepper. Then I just cook it until it's as thick as I want. Before I discovered the butter biscuits I used to add butter but the butter in the biscuits is the perfect amount. What a fun thread! I can't wait to see how everyone else cooks there's. I think there are regional differences because I know some people;e add veggies to their's but we don't do that in FL or GA that I know of. |

I never had them growing up. I didn't even know they existed. The good thing is you can cook them till they're fluffy or longer till they're dense which is how I like them. Totally opposite of how I was raised but I love them. |

I make them the way my grandmother did. I boil the chicken, take it out and cut it up. Then I take flour, baking powder, 4 eggs, salt and pepper and broth from the chicken and mix together. I make a soft dough and knead it. Then I roll it out, let it set a few minutes and cut in strips. Add chicken and the dumplins in the broth and cook until they are done. I don't measure anything just throw it together. |

Now Im really wanting some. My husband goes on a business trip soon and I will make me a big ole pot and pig out for a few days! I have never done the biscuits,have heard of it though. I also have heard of using flour totrillas cut into strips ,anyone tried that? I make my from bisquick, I like the big fluffy ones. The problen I have is sometimes they don't fluff they just get gummy. I wonder what causes that? Ok,Cindy whip out that recipe.;) I have had them rolled into noodles and I really like that ,Im just to lazy. I think I will try the grands,Thanks Nikki. |
