Here is the German version... 2 lbs. lean ground beef 3 hard dry buns 1 chopped onion All season salt 1/2 tsp. thyme 2 eggs soak buns in cold water until really soft and press most of the water out again mix it with the ground beef, the onions, the eggs and the spices form small patties with your hands and fry them in a pan with vegetable oil until dark brown on both sides serve with potato salad and call it ~ FRIKADELLEN ~ now my mouth is watering and I have to make it tomorrow... even my California grown hubby just looooooves them.... |
Here's my grandma's recipe: 1 lb ground beef 1/2 cup chopped onion 1/2 tsp fresh chopped garlic 3/4 cup stuffing croutons-italian herb flavor 1/4 tsp dried oregano (optional) 1/4 tsp dried parsley (optional) 1 egg 1/2-1 cup milk ketchup mustard Preheat oven to 350 Put croutons in plastic bag, and pound with rubber mallet or go over with rolling pin. Mix ground beef, onion, garlic, croutons, herbs, and egg together in medium bowl, using your hands. Add 1/2 cup of milk, and work in, adding more milk if mixture is not wet enough. Let sit at room temperature for 10 minutes and rework with hands (Croutons will soak up moisture). Shape, and place in loaf pan. Top with squiggles of ketchup and mustard. Cover with foil, bake 35 minutes. Remove from oven, uncover, and bake 15 more minutes. Take out, let stand 5-10 minutes and serve. My husband also really likes his with BBQ sauce on top, with the ketchup and mustard. I personally don't eat this (vegetarian here), but he LOVES it!!! (And, since I love him, I take one for the team and mix the meat up with my bare hands!!!) |
Sorry, I'm just now seeing this. We actually just had meatloaf this past weekend and MY recipe is WAY easier than all the ones posted here. You are all so talented but if you want something really, really easy here's my secret..... it's in a can called Hunt's Meatloaf Fixin's (I find it on the aisle with the Rotel tomatoes). All you need to add is the meat, eggs, breadcrumbs and any extra seasoning you want (I am very generous with the garlic powder). Thought maybe some of you would like to take the easy way out with me! ;) |
Hmmmmmmm comfort food. :) I remember my mom always made extra meatloaf mixture and stuffed green bellpeppers for my dad. Just traveling down memory lane. |

another thing i like to do is take a meat mixture...sorta like meatloaf, but with rice, and wrapped it in boiled cabbage, then let it simmer in a tomato based sauce for a few hours. it is soooooooooooooo good. "stuffed cabbage". sometimes we just toss the boiled cabbage in with a lot of the chopped up meat mixture and make it more like a soup. i LOVE it!! |

You should have seen me when I bought liver for Emma and Milli! I had NO idea that stuff looked or smelled like that. I literally gagged several times in the process of unpackaging, cooking, smelling, and cutting up that stuff! They won't be having that again for a long time! |
