I have a very unusual question here. Back in 1968 I took some things over to a gals house. Her mom was there visiting and cooking supper. She took a loaf pan out of the oven that smelled heavenly so I ask what it was and she said a meatless loaf. The color was like cornbread but it was not cornbread. They were 7th day advent and did not eat meat. Does anyone here have any clue at all as to what kind of loaf that could have been? |
I found this recipe MEATLESS MAIN DISH Lentil Loaf 1 Tablespoon of oil 1/4 Cup chopped sweet pepper 3/4 Cup onion (chopped finely) 1 Cup bread crumbs 3 Cloves of garlic 2 Cups cooked lentils 1/4 Teaspoon of sage 1/2 Cup cooked barley 1/4 Teaspoon of parsley 1/2 Cup sesame seeds* 1/4 Teaspoon of parsley **Sesame seeds should be ground in a blender. Saute onions, garlic, parsley, sweet pepper, and sage in oil. Mix all ingredients together. Bake in oiled dish @ 350 degrees for 1 hour. Serve with gravy. OR THIS ONE Ingredients 1 medium onion, chopped 6 cloves garlic, chopped 1 tablespoon olive oil 1/4 cup vegetable broth (Swanson's has no MSG) 3 brown eggs, well beaten (I used Grade A Large size) 2 cups non-fat cottage cheese 1/2 can (4.25 ounce) chopped olives 1 can (4 or 4.5 ounce) chopped green chile peppers 1/3 cup pine nuts (or substitute pecans or walnuts) 1 small bag chopped pecans (or walnuts) 2-1/4 cups corn flakes Seasoning to taste: (black pepper, Italian seasoning, dried cilantro, dried fenugreek, dried dill, dried chives were what I used) Instructions Preheat oven to 350 degrees F. Saute onions and garlic in olive oil. Beat eggs. Add bouillon, eggs and remaining ingredients, mix well. Bake 1 hour in lightly oiled loaf pan or casserole dish. Mine was a tad dry, so I added a splash of beer prior to putting in casserole dish. GOOD LUCK! |
OH, those sound so yummy!!!! I'm going to make both. On the second one, do you know if those are ripe olives or green olives? I'm "asumeing they are ripe olives since they are in a can? Thank you so much for helping me out with this. Now you can come to supper anytime you want. :D |

This is Mom's recipe from back home Meatless Loaf 1/2 cup catsup 2 Tbs brown sugar 2 tubes Gimme Lean (hamburger style) 1 med onion - fine dice 1 cup rolled oats or bread crumbs 8 oz tomato sauce 2 egg whites 2 tsp rubbed sage 2 tsp vegetarian worcestershire Preheat oven to 350 degrees. Combine catsup and brown sugar in a small bowl, set aside. Combine remaining ingredients in large bowl and mush together - I like to do it with my hands - its kind a therapeutic ;-) Shape into 6 oblong balls and place in 9x9 pan sprayed w/ nonstick spray. Top each mini loaf with a large spoonful of the catsup mixture and bake for 1 hr. |
I worked at an SDA hospital for 16 yrs and most of the people I worked with were SDA also. They didn't serve meat at all until a couple of years before I left, and they never served meat in the cafeteria, so I know a lot of their foods, LOL. I know they use a lot of Special K and there's a loaf that I think is delicious that a friend makes and calls "Cottage Cheese Loaf" ..here's that recipe and a couple others that are meatless: Cottage Cheese Loaf 1 qt cottage cheese 1 cup chopped walnuts (optional) 4 eggs 1/4 cup melted butter or margerine 1 pkg onion soup mix 4 cups Kellogg's K cereal 3/4 cup water Mix it all up and bake in a greased dish for 1 hour at 375 deg. F. Cashew Roast 3/4 cup raw cashews, broken 1 can chow mein noodles 1 small can water chestnuts 1 cup chopped onion 1 cup chopped celery 1 can mushrooms (save juice) 1 can water, including juice (use mushroom can to measure) 1 can cream of mushroom soup Saute onion and celery in oil or margerine. Add nuts, 1/2 of noodles, mushroom soup and water to sauteed ingredients. Place in buttered baking dish. Sprinkle top with rest of nooles. Baek at 325 deg F. for 45 minutes. Holiday Loaf 1/4 cup margerine 1 medium chopped onion 1 pkg Gerorge Washington broth (dark) 1 tsp. chicken-style seasoning 1/2 cup chopped nuts 3 eggs 1 pint cottage cheese 2 1/2 cups Kellogg's Special K 1 (13 oz.) can soyameat chicken style, diced Saute the onion in margerine. Add seasonings and broth. Combine with other ingredients. Bake in greased loaf pan for 1 to 1 1/2 hours at 350 deg. F. |

WOW, I think I hit the jackpot here!!!:D Believe it or not, I will make every single one of these recipes. I made one this evening from a little cookbook written by a chef who owns a few health food stores with Deli. The one nearest us is in Solvang and we love having lunch there on a week-end. Anyway here it is for anyone who is interested in this meatless loaf. RISOTTO-ALMOND LOAF 1 small onion finely chopped 2 tbl. olive oil 3 garlic cloves, minced or pressed 1 tsp. dried basil 2 cups Arborio rice 4 cups vegetable broth 2/3 cup grated carrots 1 cup sliced almonds 2 1/2 cups shredded mozzarella cheese 1 cup shredded Parmesan cheese 1 tsp. black pepper 1 tsp. salt 2 large eggs, beaten Vegetable spray Preheat oven to 325 degrees In a 3 qt. saucepan heat the oil and add the chopped onions. Saute until onion is transparent. Stir in the garlic and basil. Add the Arborio rice and stir until the rice is well coated with oil. Add the broth and bring to boil. Cover and lower heat. Simmer until the rice has absorbed all the broth, 20-25 minutes. Transfer the rice into a mixing bowl, fluff and allow to cool. Add the remaining ingredients and fold in gently. Grease a 9x5 inch loaf pan with vegetable spray and press the rice mixture evenly into the pan. Brush top lightly with olive oil. Bake at 325 degree for 1 hour. Allow to cool for 15 minutes and turn out of pan onto a serving plate. Serve with a green salad for lunch or dinner. Also great topped with sauteed mushrooms, vegetables or balsamic vinaigrette. |

Here's another version of the "Cottage Cheese" loaf... it's one of my favorites. My sister uses rice krispies instead of special K and says she likes it better... leftovers are great for "meatloaf" sandwiches too... Let us know which ones you like best when you get a taste of all these recipes... Cottage Cheese Roast (a variation of Special K Roast) 2 pounds of cottage cheese (this seems like a lot -- maybe 2 quarts? 1 onion – chopped and sautéed 3 pkgs George Washington Broth 5 eggs, beaten (or egg beaters) ½ cup walnuts, chopped ½ cup milk 4 cups Rice Krispies 1 tablespoon soy sauce I put the onion in a 2-cup measuring cup with a sprinkle of water, cover with plastic wrap and microwave approximately 2 minutes to sauté. I think you could use a pkg of Lipton onion soup mix (dry) if you don’t have the George Washington Broth packets. Mix all ingredients together and pour into a sprayed 9x13 pan. Bake in a 350 degree oven for at least one hour or until fairly firm and lightly browned. Enjoy! |
